Pasta - just in general really, usually with some kind of veggie sauce, or cheese, or roast veg pasta bake with feta. She used to like creamy leek pasta (sautéed finely chopped leeks in oil and butter, bit of pasta water as it’s cooking to help soften, stir in cream, grated cheese and black pepper at the end) but she’s gone off it a bit now.
Orzo (so pasta again really!) - I do it with prawns and peas so not veggie, but sometimes do broccoli or asparagus or other veg in garlic oil, squeeze of lemon juice and then stir it through the orzo and peas which I cook together. Can add a bit of creme fraiche or something like it for creaminess.
Another ‘used to like’ (she’s 2 and we are losing acceptable meals by the day) was creamy garlic mushrooms which she’d have with rice, pasta or couscous
She really likes couscous the little weirdo - so I do that with the same kind of tomato sauce I’d put with pasta, or with some roast veg and a few tinned beans or chickpeas.
Boiled or scrambled eggs with toast, usually add some frozen peas or avocado depending on what we have in
Eggy bread with cheese and spinach
Jacket potato with beans - sometimes do my own bean/ lentil/ chickpea concoction or sometimes just good old heinz
Soups and crusty bread - pretty much any soup, I do a cabbage and white bean one, or a red lentil one
Stir fry veg and noodles - I usually put some ground up nuts in for protein or try to make a peanut butter type dressing/ sauce - results have been mixed but she always eats it 🤷♀️

Veggie sausages with mash and peas/ beans
Quesadillas - with whatever we have, usually tinned kidney or black beans, avocado and cheese. She’s obsessed with ‘dip dip’ so either sour cream or yoghurt or something, and mainly uses the quesadilla to eat as much of that as possible before finally eating the thing
Homemade pizza (DH’s domain and he faffs about with the base recipe endlessly, but if it’s left to me I do the one just with flour and yogurt, or I’ll make them on a tortilla wrap, pitta bread or bagel!)
Veggie/ cheese bake - basically the same as a cauliflower cheese, I just use a mix of veg with whatever we have, make a cheese sauce to go over it, usually top with breadcrumbs and bake. Can put potato/ bread/ pasta on side if you want carbs, or salad to make it a bit healthier!
Courgette/ carrot fritters with egg on top - she doesn’t like them much on their own but adding a fried egg makes all the difference.
Veggie breakfast - fried or poached egg, beans, hash brown, mushrooms, toast, avocado if we have it, she doesn’t eat tomatoes other than in a sauce but you could add them, or veggie sausage.
