Cheaper chicken sandwiches

I am trying to cut down on red meat in my family’s diet. I want to make them chicken sandwiches for their lunches but I think buying those packet is very expensive. Anyone have a idea for chicken that is just as nice but cheaper way? Can cooked chicken be frozen?

Yes cooked chicken can be frozen. I do it all the time for curries and stir fries. However, it my case, it is always cooked through properly before we have it. Not sure if you could simply defrost it and bung it in a sandwich

Can you just roast a chicken and use it during the week - roast on Sunday it will still be fine to eat on Wednesday. I wouldn't want to eat defrosted cooked chicken cold.

I find using chicken legs is a cheap way to use chicken across several meals.

I cooked 8 yesterday in the slow cooker. I used some in a mexican dish, I will make a curry and a teriyaki dish and DH/DS will have the rest in sandwiches for half the week.

(All the main dishes will be enough for 3 of us with some leftovers as well).

The cheapest way without doubt is to cook a whole chicken. Cut up all the meat (as in all of it, not just the breast) and use for sandwiches for the next 4 days.

Slow cooker a whole chicken. You won't get crispy skin but it tastes great. I tend to cook it using a couple of carrots/ egg poachers/ half onion to raise it out the liquid and turn it upside down so even the bottom of the chicken cooks

Pull it apart (literally strip it) and even a very cheap chicken will give 700-800g of chicken which is easily 7-8 sandwiches. Either keep it in the fridge for 3-4 days or freeze in individual portions and defrost.

I make about 3 liters of chicken stock with a whole bird (fry the outside first to give it more flavour) then strip off the meat which by now is falling off the bones, use the breasts for salad and scissor up the remaining meat for chicken mayo sandwiches.

Not quite the MN chicken but a good use of your money.

I would buy chicken thighs and cook those so that you've got enough chicken for a few days sandwiches. I'd say you need something like 1/2-1 thigh per sandwich, depending on how big the thigh is. So a packet of 6-8 would easily do a few days of multiple chicken sandwiches.

I had a couple of boneless thighs (uncooked) after I'd made a paella recently. I cooked them in the air fryer and we had sandwiches with them for lunch the next day.

Once you have finished cooking the chicken you can pour out the liquid and leave the cut-up skin in there for another hour to get the chicken equivalent of pork scratchings.

they are saltier and probably have other additives too, some have quite a bit of sugar, but a rotisserie chicken from a supermarket is cheaper than cooking your own.
