Can I make soup with 500g of santini tomatoes?

They are like smallish baby plum tomatoes in red and gold and went out of date yesterday.

I don't want to waste them so was thinking of making a soup. Is this enough tomatoes to make and if so does anyone have a recipe please?

I don't have veg stock so would chicken stock be ok or no?

Yes and chicken stick also fine. Lovely if you roast the tomatoes first.

Probably a small portion! Most recipes call for 1KG/1.5KG but it would still be better than waste! You will probably just need a small carrot, onion and celery and chicken stock would be fine as long as you're not feeding any veggies haha!

I'd roast the Tom's cut in 1/2 with onion and garlic for 35 mins or so. You can add peppers, courgettes etc if you want to bulk it out. Add some stock and whizz with a stick blender. Add salt and pepper to taste.

Yes that would work, chicken stock would be fine! Put some basil and oregano in, a little bit of sugar, any other veg you've got lying around (peppers are nice) and you're good.

Tomatoes a day past their date are still fine to eat. Soup seems a bit of a waste.

I know what you Ken but I don't want to just eat a pile of tomatoes in one sitting and I don't know what else I can do.

You could but you could also dry them. That's what I've done- put in a low oven and dry out. Then pop in the freezer. Yum

Adding tomato puree would add flavour and colour! Basil or even some mixed herbs, a little sugar, salt and pepper and you might have a new favourite!

Please ignore the sell by date; they are fine until they go squishy (and even then fine if they're cooked.)

If you don't want to make soup, roasted tomatoes are also gorgeous on anything: pasta, rice, couscous,, toast. They're a great way to really dress up a bowl of pasta with ordinary jar pesto.

Unless wrinkly or mouldy still good to eat I use veg weeks past its best by date you can easily tell if beyond eating.

Another nice thing to do with excess cherry tomatoes is to chop them up into quarters, saving as much juice as possible (tip it from the board into the dish), and stir (uncooked) through hot pasta, with some pitted olives, a small garlic clove finely grated, a splash of olive oil and a small splash of wine or basalmic vinegar, salt pepper and a crumbling of feta cheese. Stir over a low heat for a few moments and the tomatoes soften, the garlic is warmed and the feta starts to melt. Add a sprinkle of fresh herbs - basil & oregano maybe. Delicious, and a whole punnet of tomorrows gone in one sitting.
