Vegetarian main ideas

We’re having a few people over for a casual dinner tomorrow and one is a vegetarian, who we didn’t know was coming. The starter is goats cheese tartlets, mains are salmon and veg, and dessert is lemon meringue ice cream cake.

Would anyone have a nice, but easy to prepare main?

considering you are already cooking a main course - i’d do something easier like grilled halloumi (with the same veg) or a quorn escalope that can be just shoved in the oven

What vege are you having with the salmon?

You could do something easy like one of those long red peppers, stuffed with feta, chopped red onion and a squeeze of lemon juice to go alongside? Or a couple of big roasted mushrooms (even better if roasted with some halloumi).

I'd be very disappointed to receive a Quorn escalope!

This is really nice, easy to prepare and you could cook alongside the salmon. Big mushrooms with Herby/garlicy crumbs would also be good.

I agree stuffed peppers would go nicely. You can buy them if you wanted to cheat a little!

Quorn escalope is the “I couldn’t give a shit” of vegetarian meals. They’re bone dry and depressing.

Stuffed peppers, grilled and stuffed portobello mushrooms, spanakopita, quiche (although a bit overdone in pub menus for decades), or this mushroom stroganoff are all good:

The veg for the starter is just baby potatoes, asparagus, baby carrots & broccoli.

I’m a vegetarian (well pescatarian so I can eat fish if I have to) - I really don’t like goat’s cheese or stuffed peppers or big mushrooms!
I’d love aubergine (moussaka or parmigiana).
Also love a veggie shepherd’s pie (with lentils or quorn- I don’t mind quorn mince).
Or grilled halloumi with cous cous (you can do a spicy sauce with the cous cous).
A Spanish omelette?
I find there aren’t many good vegetarian “meat and veg” substitute dinners, though it could be because I love Italian and Mexican and curry rather than veg and X.
But I never was a fan of the veg and x option and I’d rather have a lot of little bits (fried halloumi, the veg you have and a grilled few bits of veg (eg peppers).
Sorry if I’m not much help but felt I had to stand up for those who don’t like big mushrooms and peppers (wish I did!!)
