Which two tray bakes?

I’m making tray bakes for MIL’s birthday party. It starts at 8pm so this is the pudding part of the nibbles (small filled roles mainly).

Which two would you make/prefer? I can’t decide and MIL isn’t fussed.

What choices OP?!

Spiced slice. Can't see a recipe for this, it must have another name. It's a dark coloured, light to the touch, sponge, plenty of cinnamon, with a very few currants. Glacé icing.

Banoffee tray bake.

Can't go wrong with a good goey brownie. My favourite recipe: scroll to the bottom

The other one I make, is adapted from an old WI cook book. You make a biscuit base (either bake a shortbread in the tin you'll use or do a pressed digestive base.) Make buttercream. Colour it green (stay with me) and add peppermint essence to taste. Spread over the biscuit base. Top with melted chocolate. Minty tray bake. Can be orange flavoured and coloured. Always the first thing to go!

Malteser tiffin www.bbcgoodfood.com/user/441543/recipe/malteser-tiffin. It's absolutely amazing. Very very sweet so cut into small pieces (not large slabs, oh no). Nigella Lawson used this as a birthday cake for her daughter one year. Really easy to make.

Just made an Eton Mess traybake which was lovely. Didn’t make my own meringues though! www.deliciousmagazine.co.uk/recipes/eton-mess-traybake/

Something chocolate based and something fruit based, to cater to more tastes. Chocolate brownies are always popular and maybe something like Bakewell slice or lemon bars?

MinnieMountain · 26/08/2022 08:10

Ohh, I love the look of the minty traybake.

Eaton mess looks delicious but it looks like it needs a fork to eat and that won’t be an option (house full of people).

I’m sure banoffee would go down well but I hate the smell of bananas.

Definitely a chocolate one (either brownie or tifffin) and a fruity one, I would do lemon with a blob of cream and slice of strawberry on top of each square.

Have a search for the MN thread from a few years ago on Protestant traybakes (really!) as you're bound to find lots of ideas there. It might be in Classics?

MinnieMountain · 26/08/2022 11:03

I’ve read that thread @KillingMeDeftly . It’s brilliant. I need help on deciding. Family have been far too on the fence.

So lemon. I do a good one of those. Or cherry and almond?

Brownies are clearly popular. And that minty one that @JuneOsborne gave the recipe for because I love the sound of it.

A family fav and one I have made hundreds of times. Bloody delicious!

Chocolate Brownie , make i 24 hours before as it takes much better
Apple pie with a buttery shortbread pastry base , apple puree and a crumble top ( though you'll need plates , small slices won't need a fork)

verdantverdure · 31/08/2022 12:49

If it's an older crowd would bread pudding go down well?
