What can I bake for FIL with prediabetes?

rosebud5678 · 24/08/2022 22:20

FIL is 83 and has only just been diagnosed this week. DH is visiting him next week, and I usually make some cake or cookies...clearly this is no longer appropriate.
My question is - what could I bake instead? If anyone has any experience of this, I'd be really grateful!

If I remember right there used to be a recipe for cookies using peanut butter and almond flour. Is a thick dough and you use a form to squash the balls. May be worth a Google?

Mini crustless quiches/frittatas baked in a muffin tin or silicone cupcakes cases.
This recipe and this one are my favourites and can be frozen.

This recipe is good

He's 83 and still not developed diabetes?

Just make the cakes.

PritiPatelsMaker · 25/08/2022 08:50

How about this Apple & Cinnamon Cake?

Phineyj · 25/08/2022 08:52

We use madeleine tins to make mini toad in the holes with cocktail sausages. Yummy!

This!

If you absolutely need to make a change you can substitute some of the sugar in the recipe for sweetener.

If substituting do it by volume not weight. So if the sugar come to a cup, omit the sugar and use the same cup filled with sweetener.

But really, at 83 it's nothing to worry about too much. He'll have the option of medication if it develops into diabetes.

It's important for a 40 year old to get a grip on pre-diabetes as the could have 40-50 years of organ damage ahead of them. But not in your 80's.

It's better for him to continue with his routines.

We have diabetics in the family. The important thing is to be careful around hidden sugars and to have smaller portions of the indulgent stuff. Cake is fine. But a small piece.

Memom · 25/08/2022 12:55

Diabetes nurse told DH have the same stuff just smaller portion. Her tip was make cupcakes rather than a whole cake as then you're not tempted to have a large sliceHalo

rosebud5678 · 25/08/2022 13:32

Thanks everyone!

Interesting comments re the approach to this in your 80s being slightly different. I think FIL would be quite happy to simply cut back on treats...but I get the impression MIL has other ideas! And she organises the weekly shop online...
I will have a look at the recipes suggested, or may simply make some really nice wholemeal bread (another thing he's been advised to eat)

I adapted this scone recipe for my dad who is pre diabetic. www.bbcgoodfood.com/recipes/classic-scones-jam-clotted-cream but make it with flora lightest, skimmed milk and one tablespoon of sugar. Obviously not served with clotted cream but scrape of flora and Stute low sugar jam.

TheStarsDontShine · 25/08/2022 13:56

It depends how extreme you want to go - dp reversed his diabetes by cutting all carbs so cream and butter fine, flour and sugar not. Almond flour is a good subs for normal flour and there are loads of recipes online for keto cakes and puddings. I wouldn't use flora or marg either

Hi, op
my DP is type 2 and I make this cake for him

400g tin of chickpeas, drained
3 eggs
4 tablespoons granulated sweetener
3 teaspoons almond extract
1 teaspoon baking powder

Put all ingredients in a processor and blitz until smooth
pour into a greased lined cake tin
drop handful of raisins in
bake 40 minutes on 180 degrees fan
I use an ordinary oven and check the cake at 30 minutes, it’s generally done

Dp finds it does not affect his blood sugar readings much.
it works well with sugar free custard too as pudding and custard
you can vary the flavourings too, I add zest of lemon for a lemon cake, or vanilla extract etc.

MinnieMountain · 26/08/2022 06:46

MIL is type 2. I’ve made her this aforkfulofspaghetti.blogspot.com/2010/02/slice-of-action-torta-caprese.html?m=1

My DH (mid-seventies) has stayed in pre-diabetes for many years with a low-carb diet and no medication. Cakes are tricky, but our favourite treat is a chocolate mousse made with 30g of very dark chocolate and an egg. You can add a bit of cream to lighten it. No sugar needed.

I make one like this for myself! Anna Jones cannellini cake (annajones.co.uk/recipe/amazing-lemon-cannellini-cake). I don’t bother with icing it. It’s yummy and filling and full of protein, so great for older people who may struggle to get enough protein.

bruffin · 26/08/2022 06:57

Dont bother with anything with artificial sweeteners, they taste awful.
Just smaller portions
Something like a wholemeal banana cake is good because it has lots of fibre

TheStarsDontShine · 26/08/2022 10:20

Bananas are not good for diabetes - they're high in carbs and sugar for not a lot of nutrients. Ripe ones even more so. Fruit choices should be berries or watermelon

bruffin · 26/08/2022 10:33

We are talking about baking for a small treat not every day!

But banana cake is ok. I have diabetes and a banana is fine when i am exercising and a small piece of banana cake made with wholemeal flour or maybe almond flour and reduced amount of sugar is fine ie using the sugars in the banana to sweeten the cake.
Diabetes.org even have a recipe
www.diabetes.org.uk/guide-to-diabetes/recipes/banana-bread

My dietician told me last week , we dont expect 100% perfection just 70 to 80% in diet.

berksandbeyond · 26/08/2022 10:57

If I make my 80s and someone tries to make me cut out sugar I'll cut them out of my will.
I'll be eating and drinking whatever the fuck I want!
What's it going to do? Cut his lifespan? Christ, who wants to be 90 anyway?!
