Hi Foodie MNers, I need your help.

DH does the majority of the cooking in our house, which has resulted in a total loss of confidence in the kitchen on my part.

I want to take more of a turn and do at least a couple of nights a week, but I honestly don't even know where to start.

I can chuck together a pasta & pesto, or throw things from the freezer into the oven, but beyond that all my inspiration and confidence is gone.

Any suggestions for simple but tasty stuff I can start with? We eat pretty much everything.

Thank you. I've offered to start tomorrow night and I think we have the majority of ingredients for that already. I'll need to pick up some wine but a glass of the leftovers might take the edge off having to get in the kitchen Wink

Hiya, yesterday I cooked a nice meal. OH agreed so it can’t have been bad!! It was Teriyaki salmon with rice. I’m a pescatarian so I had salmon in mine but you could easily substitute it with any meat of your choice.

i cooked the salmon in the oven in a tin foil parcel (god that sounds poncey! I’m no delia smith) with Teriyaki sauce - a few splashes.

While that was cooking, in my frying pan I melted some garlic butter and added mushrooms and onions and cooked until brown on a medium heat.

i also boiled some broccoli whilst cooking the onions and mushrooms.

once the salmon is cooked i chopped into smaller pieces and I added this to the mushroom and onions.

once the broccoli is cooked, drain it and I also added this to the pan of salmon, broccoli, onions and mushrooms. Add more garlic butter or olive oil if needed. Only a small amount.

i then added smoked paprika, salt, pepper and for me more garlic granules. I just taste it and see what it needs more of! No measurements! Also add a good amount of teriyaki sauce to the pan. So you have a little bit of sauce. Again, up to you how much you add for taste and consistency.

serve with rice.

Another one I cook is salmon (again but you can add meat if you eat it)

salmon in oven sprinkled with rosemary.
boil broccoli
mushrooms in garlic butter and onions in frying pan

boil some pasta

when mushrooms and onions are golden add the cooked broccoli and the cooked salmon.

add crème fraîche - I usually add 2 heaped desert spoons. Cook on a low heat.

add some spinach e leaves and continue to cook in a low heat.

when pasta is cooked. Drain and add to the pan of salmon etc.

you may heed to add some more crème fraîche depending on how creamy you want the meal.

Finish off with a sprinkle of pecorino or if non veggie then you can use Parmesan.

This is my go to easy dish for four and can be reheated/doubled etc:

Two onions, sliced; two peppers, sliced or cubed. Sweat and fry in olive oil. Add 5 or 6 chopped up tomatoes or a can of chopped tomatoes, and chop up 5 or 6 merguez sausages - can use normal sausages but merguez means not much spice necessary. Cook on medium with a lid until everything looks cooked.

If you don't want sausages then add any mediterranean veg and ras al hanout spice mix.

Prepare some couscous . Add spices to sauce if you feel it needs them. Eat.

This one is one my DP made and he said it was easy - it was delicious!

You need:
Pack of 6 nice sausages
Jar of grilled peppers
Prosciutto or Parma ham
Fresh lasagne
Pot of Arrabiata sauce
Crème Fran he
Grated cheese

Make a mix with the sausage meat and the pepper, divide into balls (do the number of balls to go with the number of lasagne sheets you have in the pack - that was 11 yesterday). Shape into sausages about the length of the lasagne sheet width and roll the prosciutto round each one, then roll the lasagne sheet round that so you have cannelloni. Put them into a tray/dish about the right size so they are quite tightly packed in. Mix some crème fraiche with the arrabiata sauce and pour over, too with cheese and bake in the oven for about 45 mins.

DP says it is satisfying to make because you use a whole pack of everything and it's easy to clear up. DSD says it is good cold, which is good because she ate a family-sized meal of leftovers for breakfast.

Tepsi Kebap

This is a really good recipe from Sabrina Ghayour. It’s basically a giant oven baked kebab. Recipe is with lamb mince (500g packet works fine) but same method works with beef mince too. Can be prepped in advance and only takes 20mins to cook.
I’ve not made the Spinach yoghurt that is also mentioned. We just serve it in flatbreads with salad and Greek yoghurt or humous.
It’s a bit of a ‘fake-away’.
NB Pul Biber is in Waitrose or more cheaply in Mediterranean style shops.
Also think it’s best to stand it for 10 mins then slice it.

Also, cod fillets, spread the tops with red pesto, wrap in prosciutto and bake. Serve with roasted cherry tomatoes and peppers.
