Lasagne sheets… not lasagne

I’ve got about a third of box of lasagne sheets that have been cluttering up a cupboard for too long. I suspect it’s enough for a main meal for two people, but I can’t be arsed to make a full on lasagne that small.

Any good thoughts on how to use it?

Soften in boiling water remove and slice into ribbons and replace in boiling water and use like tagliatelle with a sauce.
Cook sheet until almost cooked through add filling and roll like cannelloni.
Break into little pieces and add to a soup like minestrone.
Make a kind of open lasagne, layer up garlicky roasted veg between sheet and top with mozzarella

Cook it and cut into strips and serve with a pasta sauce maybe

Just break it roughly into pieces and cook it as normal pasta, really great with a meat based sauce, like a beef or lamb ragout or a simple Bolognese. There's a pasta shape called "maltagliati" that would resemble this.
I also like to use broken up lasagne sheets to make "pasta e ceci", a sort of rich chickpea and pasta soup flavoured with garlic and rosemary. It's a 15 minutes recipe and a delicious comfort food for cold days

This is delicious. I have found it quite an adaptable recipe too, switching almonds for different nuts, and nutritional yeast from parmesan (as a non-vegan household we don't keep nutritional yeast in).

What is nutritional yeast please? Is it Marmite or something like that?

I’m not that good at explaining as I don’t have it personally so you might be better googling. But from what I understand it is a vegan, powdery, supplement that give a cheesey flavour.

@SiobhanSharpe having inherited a tub of it, nutritional yeast tastes just like vegetable bouillon powder. Parmesan is much nicer Grin
