We have a friend coming over for dinner tomorrow and he’s veggie and he doesn’t like mushrooms.

DP immediately suggested panzanella to start as it’s one of his favourites but that then leads me to pasta/risotto for main which I feel is pretty boring for vegetarians and mostly what you get offered?

For my vegan friend I often do an Indian spread which is quite nice so that’s an option but I just wondered what an ideal dinner party menu would be if you’re veggie?

Other info - I’m a fairly competent cook but not a big baker (too sciency!) and I have all day tomorrow so time is not a problem but would be nice if it’s not all last minute.

I love Greek cuisine at the moment. Starter ideas include honey baked feta, halloumi salad, and stuffed tomatoes
For main course, I like Greek style orzo, spanakopita or red lentil moussaka.
For pudding, serve baked apricots

An Indian spread would be lovely.

Greek/Middle Eastern always nice too.

Basically, I like anything that gives me a selection of nice things to choose from and would always prefer that type of meal to a, 'Here's a bowl of pasta' sort of meal.

Personally, I wouldn't bother with a starter - just bread and olives or something like that.

Thanks guys - going for Indian (although I’ll do Greek next time as honey baked feta sounds like something I want to put in my face!)

so we’re having

tikka paneer skewers
onion bajjis
roasted veg curry (cauliflower, potatoes, carrots and onions)
crispy spinach with yoghurt, tamarind and pomegranate
pilau rice
daal makhani

and lots of beer and wine!

@RemusLupinsBiggestGroupie Haven’t got a recipe as such but I think cauliflower and carrots definitely taste better if roasted so was thinking I’ll probably cut them up, with some onions, a small bulb of garlic and some fresh chillis, toss them in oil and cumin, coriander and Garam masala and roast them.

Meanwhile fry off some more onions and the potatoes in the same spices, some curry powder and ginger powder, add vegetable stock and maybe some red lentils to thicken and then cook that down for the ‘sauce’. Will squeeze the garlic in to the sauce but undecided if I stir the rest through before serving or serve on top…

I can let you know how it turns out if you like?!

I do a really lazy one on a work night sometimes - roast chunks of vege (usually onion, carrot, cauliflower, pepper, maybe new potatoes) and then use a Spice Tailor sauce. If it's the dhanksak sauce I put a tin of pineapple and its juice, plus a tin of lentils after the roasting.

In further news, I just made onion bhajis in the air fryer! They are not quite as good but they’re still delicious and so much less mess! Game changer!
