Need a recipe for game pie - the cold variety and also,anyone know what to do with muntjac?

So you want a recipe for deer.
Well, you can cook it in a pie/casserole/roast dinner like any other meat.

Game Pie.
900g (2lb) Mixed Game (ie rabbit/hare/pigeon/pheasant or deer)
450g (1lb) Sausage Meat
340g (12oz) Hot-Water Crust Pastry
280ml (½ pint) Aspic
110g (4oz) Streaky Bacon
110g (4oz) Mushrooms
2 tbsp Fresh Herbs (Marjoram, Sage, Thyme), chopped
1 Egg
Salt and Pepper

Pre-heat oven to 200°C: 400°F: Gas 6.
Remove the flesh from the game, cut into thin strips.
Line a greased pie mould with pastry, reserving enough to for the lid.
Place a layer of bacon at the base of the mould.
Cover with a layer of half the sausage meat, then a layer of game, the remaining sausage meat and finally the mushrooms - season and add herbs between each layer. What ever you do make the layers thin other wise it is over whelming.
Roll out the remaining pastry to make a lid and cover the pie.
Press to seal, trim and decorate.
Brush with beaten egg, to provide a glaze.
Cut a hole in the centre, to allow steam to escape.
Bake for 30 minutes.
Reduce heat to 150°C: 300°F: Gas 2.
Bake for 1½ hours.
Remove from the oven and allow to cool.
Heat the aspic just enough to melt, pour into the pie through the steam vent using a funnel.
Chill for 6-8 hours before serving.

Is your deer already jointed. If not get your husband to cut at the hip bones (obv then you would cut the legs so that you had two) then cut at the armpits. You should end up with two legs, two arms and the torso would need to be cut in two.

I have only used two venison recipes, they are:
12 lb To 14 pound venison hind-quarter
16 oz Bottle commercial Italian dressing
2 3/4 oz Package dry onion soup mix
3/4 c Butter or margarine; melted
2 ts Pepper
Slice steaks across the grain into 1-inch thick slices.
Combine salad dressing and soup mix in a large, shallow dish, stirring well; add steaks. Cover and marinate steaks in refrigerator for one hour, turning once.

Combine butter and pepper, stirring well; set aside. Remove steaks from marinade. Grill about 5 inches from hot coals 8 to 10 minutes on each side or until done, basting occasionally with butter mixture. Serves 10 to 12.

Also you cook it in a slow cooker.

1 venison roast
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1 teaspoon parsley
beef gravy
1 glass red wine
desired vegetables (I normally do carrots celeriac and parsnip/swedes)

Directions
Add all inredients to the crock pot
Cook on low for 8-10 hours
Serve

Thankyou The game pie looks good - i have afridge full of gamey bits to use up. I only just checked back so have already eaten the haunch - braised in cider,made it up myself but yum. Will try the othersnext time dh gets a deer.

Was just that i'd never had muntjac before - it's a lot smaller than most deer. Tasted nice,a bit like gamey veal - very soft meat. Althogh it was a young one.
