what can I do with these dates now that dd1 said she had tried at school and liked and now says they are vile?

also on the channel 4 website i think there is a chocolate cake recipe which you can increase the fibre by using dates will go look for a link

Date balls

500g dates with out the pitt
180ml sugar
1 egg
1 packet of tea biscuits

cut the dates fine and mash up the tea biscuits.

Melt butter and sugar together-dont boil it. Take off stove.
Beat egg and add with the dates to mixture.
Put on stove again untill dates melt - stirring the whole time.
take off stove and add tea biscuits. mix together good.

through out on a baking plate, pressing it out flat (about 1cm high)
Let it cool down.
when cool, cut and roll in coconut.

DS2 has taken to making this on a whim occasionally since he tried it on a cookery course - it costs a fortune, and dirties dozens of bowls the way he does it , but it is v delish (and doesn't taste of dates at all, which is lucky as I hates 'em)

Date, walnut AND BANANA cake is good. It tastes mostly of banana. I have a recipe if you want it but I'm just off on lunchtime pick-up so will check back later.

DS'1 did this. He took me round Tescos one day telling me that he's tried all these fruit and loved them all...star fruit, magoes, paw paws...So I happily paid for them all. Only for them to sit there for months because no-one wanted them. DD also tells me periodically that she loves avocado...'really DD, are you sure?' 'Yes mummy, I love them and you never buy them for me'. I know better now than to buy them because what she actually means is kiwi fruit

Date, Walnut & Banana Cake

225g/8oz self-raising flour
100g/4oz light muscovado sugar
175g/6oz butter, softened plus extra for greasing
1/2 tsp ground cinnamon
2 eggs, beaten
3 tblsp clear honey
2 medium ripe bananas, mashed (about 9oz in their skins)
100g/4oz stoned dates, chopped
50g packet walnut pieces

Preheat oven to 160c/gas 3/fab 140c. Line a 900g loaf tin with greased baking paper.

Tip all the ingredients, except for 1tbsp of honey and the walnuts, into a large mixing bowl. Beat for 2-3 minutes until well blended. Spoon into the tin and level the top. Scatter on walnuts.

Bake for 1 hour, then lightly press the top, when reading it will feel firm. If not, bake for a further 10 minutes. Leave in the tin for 15mins to cool, turn onto wire rack using the paper. When cold, drizzle with remaining honey.

Date, walnut and apple cake. Delia has a recipe in the complete cookery course that is not bad at all and is not particularly "datey".
