Trying couscous with my two kids, 2 & 5.
We eat a lot of pasta, rice, noddles etc…so now giving couscous a go.

I tend to flavour with lemon juice, cut up cucumber, olives, sweet peppers, grated carrot, sweetcorn along with sweet potato falafel.

Looking for some quick and simple ideas please.

thanks

The quick classic for kids : with petits pois and slices sausages.

  • with ratatouille vegetables and sausages.

  • any tajines go well with couscous.

  • An oriental taboule salad is nice too (tomato cucumber herbs, raisins, tomato sauce, lemon and mint).

  • more elaborate : Royal couscous

NBo kids but I do couscous in lamb stock alongside diced lamb marinated in harissa paste and courgette and red bell pepper. Can use yogurt to ensure the harissa is not 'too much'

You could try stuffed red pepper halves in the oven - the couscous comes out nice and soft in the middle, toasted on top. Very satisfying and loads of recipes online. My kids love them. If you want meat: You could serve with some basic lamb mince (fry finely chopped onion, celery, brown the lamb mince, season and add bay leaf then in the oven to bake alongside the stuffed red peppers.)

I would recommend swapping cous cous for bulgur wheat. Texture il similar, but it's tastier and richer in protein and fiber (cous cous is basically the same as pasta instead). For my 2yo I like to mix it with sauted vegetables (diced carrots, diced courgettes, peas, quartered cherry tomatoes, chopped onion and whatever I find in the veg drawer), then for protein I generally add a dollop of ricotta cheese, but you can use cubed cheese, chicken breast, boiled eggs or canned tuna. It's like a warm salad type of thing.
I also use bulgur wheat to make lentil & vegetable soup more substantial. I finish it off with parmesan and olive oil to make it a well rounded after nursery dinner. It's the easiest way to get a variety of vegetables into my child!
