Crispy air fryer wedges?

chimichangaz · 02/08/2022 19:40

I have tried and tried to get these crispy, parboiling, not parboiling, neither work. Tonight's wedges were horrible - sweet potato and the skin was really chewy!

I use fry light as I'm following slimming world - maybe that's the issue?

What are your top tips?

Make sure they're really dry when they go in. You can also dust them in a bit of cornflour to help them crisp.

Sweet potato wedges don't really go crispy by themselves. You need to dust them in cornflour, polenta or arrowroot to crisp.

How long are you doing them for and are you overfilling it ? I stop midway and shake

I'm going to try with the cornflour and also increasing the temperature.
I do them for about 15 mins, probably need to do for longer and at a higher temperature (currently 180)

Are you preheating? Can you peel them? With sweet potatoes sometimes the skin is quite thick and gnarly.

We use a small amount of olive oil.

Sweet potatoes aren’t starchy enough to crisp up without help. This video is really interesting and should translate directly to an air fryer (as a fan oven is recommended anyway).

This video was exactly what I was going to recommend!

I have used his method for crispy oven chips (not sweet potato) and it was really successful, and really rate his other recipes, so would expect this to be good. Love that he talks through the process and the reasons for each step he takes and why it's worthwhile.

Great tips, thanks all, especially for the video. That crunch!!!

So definitely peel sweet potatoes as opposed to normal potatoes. Feel stupid that I considered them basically the same!!

And a cornflour slurry rather just sprinkling.....interesting.

I've seen one of his videos before about how he set up his kitchen and what equipment he has - so I'm not surprised he does such thorough cooking videos!!
