A simple mushrooms-on-toast recipe perhaps? DD1 (4y) has always hated mushrooms but this week changed her mind radically and requested them for her birthday tea ..... I will still do sausages etc as I'm not quite convinced but definitely want to seize the moment so tell me what to do with them to confirm her change of heart please

Another birthday?????????????? Oh my word!!!!!!!!

DS1 hated mushrooms then he liked them roasted/baked.

Um.... ideas... um.... what about chopped up with cheese on top on toast?

I just add mushrooms to whatever I cook and hope for the best!

franch · 19/01/2008 16:06

Hello Mars - yep, and only just over 3 weeks to go for your two so get on the case

Cheese on top is usually good for most things ...

She loved them in the chilli we had the other night - maybe yes I'll do some mixed roast veg and hope for the best

I grate them and saute in butter with shallots and a few herbs. Stir in marscapone or sour cream for a deeeelicious pasta sauce or dip.

MrsBadger · 19/01/2008 16:09

slice or chop, saute in butter or olive oil, maybe add some cream as it's a birthday

(fwiw they are particulary good on either brioche toast or on ciabatta drizzled with oil then grilled or griddled)

franch · 19/01/2008 16:11

Ooh, never grated them!

Just remembered I had a thing for mushrooms on toast when I was pregnant with DD2. Think I did pretty much what you describe, Broccoli, but without the grating bit

Brioche toast MrsB, now you're talking

dd is enjoying raw mushrooms right now

BettySpaghetti · 19/01/2008 16:12

My DD and DS love:

Garlic mushrooms

Mushrooms in breadcrumbs with a dish of garlic mayo or tomato/bar-b-q type sauce to dip them into

Mushroom stroganoff

(as well as mushrooms added to all sorts of dishes)

Oh, that's heartening, franch. My ds (3) doesn't like mushrooms either ... weirdo Maybe he'll have an epiphany when he's 4.

I've tried grating them into his food, but he always has me sussed!

Roasted mushrooms are delicious. I also agree about breaded mushrooms .. who doesn't like those?

NappiesGalore · 19/01/2008 16:49

sliced up and sauteed in butter, with a little olive oil to stop the butter burning.

and you have to get the pan really hot before adding the butter and then the shrooms, thats how you get em to fry up nice and buttery and not go all watery and rubbish.

MarsLady · 19/01/2008 16:52

And don't fry for too long!

MrsBadger · 19/01/2008 18:03

and don't wash them, just wipe with kitchen paper or else they go all soggy and nasty

slng · 19/01/2008 19:08

We do sliced mushrooms sauteed with plenty of garlic in butter and oil and finished off with
butter (must have salt though else not nice), served with pasta. A la Carluccio's, in fact.
Quick, easy and goes down pretty fast too.

Twinklemegan · 19/01/2008 23:55

Creamy mushroom sauce for pasta is lovely. Dice them in a food processor (or by hand if you have the patience). Saute some chopped onions and garlic for a while, then add the mushrooms to the pan with some chopped parsley and a little tarragon. Cover and leave to cook for around 6 to 7 minutes, until there are lots of juices. Stir in some cream, season, heat and stir the mixture into cooked pasta. Yum!

Roast mine with salt, olive oil, garlic and a drop of balsamic vinegar (makes them a little sweet). My kids (and now the neighbor's daughter) love them.
