Hello
Expecting number one in a few weeks and as part of nesting, know that DH (and me) will want to be sure that we've got lots of quick and easy to do food in the house.
We've got a fairly big store cupboard but only a three drawer freezer for casseroles etc.

Would love to hear your easy to prep meals (and presumably all things that can be eaten with one fork)

Thanks

We lived on pasta for the first few months weeks. Get some easy-cook pasta, fill your freezer with sauces and voila. And have Domino's Pizza on speed dial

If you order a take-away, and can afford it, order extra rice and one extra dish each time.

Or, if (like us because we're pigs) you've over ordered, put small portions of everything left into a tupperware container to make up a small/large meal for 1)

Would probably work with slices of pizza too, if you wrap them properly.

Otherwise, make up batches of cheese sauce, chilli, bolognese and then freeze them in one person portions.

Goodness I wish I'd been so organised!

Batches of tomato sauce in 2 person portions can be defrosted then used as a base for spag bol, chilli etc, or just baked with pasta and mozerella.

Bags of frozen raspberries are useful for thawing overnight to have with cereal, or for whacking in porridge etc.

I'd also get bags of frozen vege - especially sweetcorn, peas, broad beans and soya beans for chucking into curries etc. Those steam fresh vege would be useful too for giving you a quick and easy vegetable portion.

A couple of tubs of soup in there would be useful too, especially for when you want to get out and about a bit with the little one after the first few days, as you can take the soup out in the morning, have a little walk to the baker's for fresh bread and then rest and do nothing but feel virtuous whilst the soup defrosts!

top tip - whenever you freeze something in a plastic box, once it has defrosted take it out of the box (dip outside briefly into warm water to loosen and then press out) and freeze in a bag instead - allows you to store lots more!
