Hoping for some suggestions for meals / snacks etc.
I’m a lifelong vegetarian. For many years now I’ve suffered on and off with IBS type symptoms. I think there’s a hormonal element - I was very well when pregnant (x3), then had real flare ups after each pregnancy. Now I’m in peri-menopause and symptoms are back with a vengeance.
Diet seems to play a big part. About 10 years ago a consultant looked into this very throughly (I had a colonoscopy, blood tests etc). I’m not gluten intolerant on tests, but my food diary showed how much better I felt when I avoided wheat.
Over the years wheat slowly crept back in to my diet, but this seemed ok (although I still got a bit bloated). But since symptoms have flared up again in the last few months I’ve cut out all wheat and many other carbs, and feel so much better again.
The problem is that there is now so little I can find to eat that I’m losing weight, and don’t really want to. I tried quinoa last week and felt awful after it, so that’s obviously out too.
Any suggestions for (easy) wheat free, low in starchy carb meals that are also veggie would be much appreciated! I think there will be some trial and error here, but I can’t live on lentil soup forever 😀.
