peel & dice the potatoes and cook in boiling water until tender.

drain, return to the pan & mash.

Flake the cod/tuna into the potato. Chop the parsley, add it to the potato & combine it well. (dill & chives are nice too, also spring onions)

Divide the portions, dip them in egg & then breadcrumbs to coat.

Fry them.

Have a look at the recipe section on the blue bar at the top of the page.

Make extra and freeze what you don't use but don't breadcrumb those ones.

You can also just dust them with flour and bake them which I'm sure makes them more healthy but not nearly as nice.

If you're a lazybones like me you can microwave potatoes in their skins until cooked (6-8 mins), then scoop out insides and mash. I add chopped cooked spinach. I also don't bother breadcrumbing yet - may do when she's older and will appreciate a crispy coating, but do dust with flour and fry in oil and butter. And second making loads and freezing - fantastic standby meal. One of my favourite variations is a smoked haddock fishcake, (the breadcrumbed variety), on top of a bed of wilted spinach, topped with a poached egg.

I'm presuming you're poaching the fish?

Before you cook them put them in the fridge for a while as it helps them to firm up and they won't break up when you cook them.
