I hope im in correct topic? Can anyone give me some ideas for quick lunches for my ds? He still has no teeth, so needs to be soft. He loves potato, bacon and beans(quick to make) I have red AND green lentils but dont know what to put them with. I got some tuna in water for him but can only think to put it with potato, but i feel i should always include veg.

veg soup with toast and butter, veg mash, risome sotto - freezes well, scrambled eggs with some grated cheese, spagetti with a sauce - cheese or tomato...the list goes on and on.

fruitymum · 17/01/2008 20:50

for the red lentils, a really nice combination is apple with red lentils and sultanas. Cook the apple and red lentils seperately, red lentils will take about 20 minutes, then chop the apple up and mix it with the lentils and a handful of raisins. It's good either on it's own or served with some rice or as a topping for bread, or a dip. I know it may not sound nice, but trust me, babies love it!

Also, red lentil dahl, cook the lentils with a crushed clove of garlic, also cook some carrots until tender, chop the carrots finely and mix with the lentils, add a pinch of cumin and a few chopped up coriander leaves. This is heavenly. You can also blend it to a smooth dip, or serve it with rice or on its own.

I'd include some veg with the tuna and potato, why not at this age when they eat it anyway right! Add a handful of peas or carrots, You could also make little fish cakes with the tuna and potato and veg mix.

curlyboysmum · 18/01/2008 15:17

Thanks for ideas! Do you think i can freeze the lentil, apple and sultana lunch?
Also can anyone tell me a fool proof way to make up a small amount of cheese sauce please? I just cant get it right!

Mascarpone cheese - heat up and then add as much grated cheese as you want to. If it gets to thick - add milk to free it up abit!

MegBusset · 18/01/2008 21:00

Easy cheese sauce -- melt a biggish knob of butter, add a tablespoon of flour and mix to a smooth paste. Add milk and stir til it thickens, then stir in some grated cheddar til it's all melted.

nappyaddict · 19/01/2008 17:54

easy cheese sauce - equal amounts of grated cheese added to milk (say 250ml and 250g) and heated until it is all combined. then you can add a few tablespoons of cream if you fancy it but the cream is optional. season with pepper.

yelnats · 19/01/2008 17:59

fpr cheese sauce I melt a knob of butter in pot, mix 3tbsp of flour with about a 1/2 pint (think thats the amt - pyrex jug full) whisk it (can use hand blender to cheat) then add to pot with melted butter and stir continuosly - do not stop for a second or it will go lumpy. once it starts to thicken add grated cheese - depends how cheesy you like it how much to use. if it gets too thick just add some more milk.

fedda · 19/01/2008 22:07

nappyaddict, I like the sound of your recipe as there isn't flour or butter in it but i remember trying similar thing and it didn't work. is there any tip you could share, please? I'd love to have a go again.

PutThatInYourPipeandSmokeIt · 19/01/2008 22:14

Instead of the milk, you could also use craime fraiche (or mascarpone cheese) - for a thicker creamier outcome

nappyaddict · 19/01/2008 22:15

just that you have to keep stirring it and heat it up really slowly. one time i heated it up quicker cos i was in a rush and the cheese melted before the milk got warm and i just ended up with a lump of melted cheese surrounded by milk. what happened to yours?

I wasn't in a hurry and I was stirring it but the same happened to mine, I'm afraid. I'm really tempted to try it again though and I like the idea of creme fresh as well. have you tried it?

nappyaddict · 19/01/2008 22:50

maybe it depends on the type of cheese? i used white cheshire - its softer than most cheeser perhaps that's why.

Habbibu · 19/01/2008 22:53

curly - don't worry too much about no teeth - those gums are very hard, and can deal with a surprising amount! Obviously be careful of choking hazards, but I think nappyaddict's list is really good.

nappyaddict · 19/01/2008 23:33

if you want to make it quick you can always give lettuce as his veg.

yelnats · 19/01/2008 23:52

With red lentils I make a lentil bake.

Chop up a leek and saute in a pot with some butter for a few mins then add some lentils, then add some chopped turnip and carrot and some water (can use stock but i tend to do just water as stock is usually salty) add a sweet potato(tho just as nice if you dont have any) and a bay leaf - leave to simmer for about an hour or til the water is mostly absorbed (kind of like thick soup). Remember to take out the bay leaves before serving. Sorry odnt have any measurements i usually just guess and make loads as it freezes really well.

What about tuna with tinned tomatoes?

curlyboysmum · 21/01/2008 20:22

Im trying the sultana, apple and lentil thing for ds tomorrow, i made loads this evening and lots in the freezer. It was very easy to make so i hope he likes it !!!Im going turnip hunting in the morning too! There is no stopping me now with these ideas. The only thing is now i need to feed myself and my starving Dp! ( oven chips and pie for us i suppose, as im worn out now

I want to give the cheese sauce idea without the flour and butter a go as it does sound a little healthier? May i just ask if anyone knows the amount of milk a newly one yr old needs per day? I know i can try cows milk now as ds is 1 one friday.

OP posts:
nappyaddict · 21/01/2008 23:24

between 12 and 24 oz

milkmoustache · 25/01/2008 17:55

Once you've perfected your cheese sauce make a whole load and freeze it in small pots - freezes really well.
I mix it up with tuna and small macaroni - DD always loves it.
