What can I do with a pack of leeks?

For the recipe-idea aficionados here, can someone tell me what I can do with leeks ? I have a pack in the fridge that were meant to go in a dish that ended up getting turned on it's head and really don't want to throw them and also don't really know what to do!

This is beautiful

Thinly slice or matchstick the leeks, then layer with thinly sliced potatoes in a shallow casserole, dotting with butter as you go. Finish with a potato layer, then pour in some vegetable stock. Dot/brush the top with more butter, add salt and lots of black pepper. I then normally microwave it for 5 mins+ just to get it started but you can miss that stage out. Bake in a medium oven until cooked and the top is crisp and brown.

They make a nice pie filling with chicken and a white wine sauce.

This salad is firm family favourite..Would go very well with a BBQ.

I like cheese and leek quiche too

Slice several leeks finely.
Cook in olive oil on medium heat until they soften
Add chicken (or veggie) stock to cover
Simmer for about 20 minutes - add more stock if they get too dry. The Leeks will become very soft & silky.

Add cooked leeks & extra mature cheddar to cooked pasta shapes. Black pepper.

Fry off with seasoning, add mixed beans, mustard, vinegar and any herbs. Water to thin out. Lovely served as a warm lunch with crusty bread or as a side dish with chicken or fish.

Creamed in a gratin dish set Ed with Sunday lunch is delicious too.
