No-cook/minimal cook dinner recipes? Too hot to stand over a stove!

Apart from salads, what else? I've been mad enough to try out a really lovely Thai fishcake recipe with special fried rice but was ready to pass out in the heat of the kitchen.

It then dawned on me that I've been "cooking" all week, and here in London we have a heatwave.
What do you do?

No cook spinach, ricotta and lemon pasta:

Cook pasta (penne is our preference).
In a bowl mix tub ricotta or cream cheese, generous grating parmesan, zest of a lemon, some oil, some fresh garlic and mix.
Just before pasta is ready, add a large bag of baby spinach to wilt. Reserve cup hot cooking liquid and drain.
Mix cheese mixture with pasta and spinach, using cooking liquid if necessary to help.
Serve with more parmesan, squeeze lemon, black pepper.

Also have been having puff pastry tarts with salad regularly - some kind of cheese mix for the base, the veg and maybe some bacon/pancetta for the top. Usually cook the bacon/pancetta or lightly roast the veg.

I've bought those super thin lamb chops for dinner tonight - will cook on griddle pan in about 3 minutes and we're having them with salad and new potatoes.

Salad and sandwiches/rolls here. It's too hot to do anything more complicated and I lose my appetite in hot weather anyway.

Not a recipe but I always cook potatoes in the microwave. (We had new potatoes on Monday) usually quicker, doesn't make the kitchen hot and no pan to wash up (bowls fit easier in the dishwasher, and are easier to wash up than saucepans!) Or as in our case there were left overs...leave in the bowl. I also cook rice in the microwave for the same reason!

I made peanut butter chicken with rice last night.
put chicken in oven. Cook rice.
mix together 2 tbls peanut butter, 2 tbls soya sauce, 2 teaspoons curry powder, 4 tbls honey, equal amount of water.
put cut up cooked chicken in frying pan and pour over liquid and heat through, 2 minutes, if you want a thicker sauce add a little cornflour.
add peas and sweetcorn to rice.
my 2 adult sons love this.

To be honest I find there aren't many decent no cook at all dinner options out there so tend to opt for things which are either quick to cook or can just be shoved in the oven to do their thing. If I'm going to have the oven on I try to plan ahead and put in anything else that needs cooking for other meals. Maybe some marinated chicken breasts, or a frittata that can be eaten cold for lunch or dinner.

Tonight I've got some fresh crab which I will add to fresh linguine (only takes 4 mins to cook) with cherry tomatoes, garlic, chilli and lots of fresh parsley. So super quick.

Last night we had tuna nicoise with tuna steaks and green beans cooked in the griddle pan in less than 6 minutes, eggs were boiled the night before.

Night before we had tandoori chicken salad which I cooked on the bbq (again really quick to cook as I had butterflied the chicken breasts and bashed them a bit to flatten.)

I bought a cooked chicken from the supermarket, one night with baguette, coleslaw and salad and then the leftovers added to a Chinese curry sauce the following night with a pouch of microwave rice and prawn crackers. Hotdogs (the jarred kind) with leftover salad and coleslaw, McCains baked potatos with tuna mayo/prawn cocktail and more salad. Quiche with herby new potatoes (the little packs that go in the microwave) and yet more salad. Tonight we have kofte kebabs (will cook very quickly in the air fryer), kachumber salad, tzatsiki, flat breads and more microwave new potatoes. We live in a top floor flat, with the smallest kitchen ever so trying to do as little cooking as possible. Think tomorrow will be a takeaway of some assortment as I am fed up 😂

We do lots of wraps/fajitas/tacos type things

Also:
quiche (ready made) and potato salad
Hot smoked salmon and couscous/quinoa
Club sandwich
Omelettes
Tuna pasta salad

You can get gazpacho soup in a carton from Sainsburys. Serve that with a charcuterie soread, cut up veg and crusty bread, hummus, guacamole. I could eat that every day!
Marinated tuna (in olive oil, soy sauce, grated ginger and lime for four hours, cook in the marinade and caramelise the ginger). It only requires a couple minutes cooking each side. Serve with a salad of tomato, mozzarella and basil.
Get those Spanish tortillas from the supermarket. Warm them and serve with veg and crusty bread.
If you don't want to fire up the bbq get those prepared skewers and pop in the oven.
Tray bakes as mentioned also good. Get packs of Mediterranean roasting veg spread in baking dish, add olive oil and balsamic vinegar, toss in a few slightly crushed garlic cloves, skinned chicken thighs, sprinkle over generous amount of smoked paprika and hot paprika and pop in the oven for 50 min. I serve it with microwaveable rice.

Has has gotten to my brain as I've completely forgotten about things like tuna nicoise, poateo salad, using shop bought cooked chicken. Etc
Love the peanut butter chicken recipe and the crab linguini one!

Last night I got lamb steaks, put in casserole dish with packet sauce, new potatoes, carrots, onions, peas and sweetcorn. All in one dish, 90 minutes cooking low. No real cooking, served with bread.
