Chili con carne

Hi. Help please. Chili has a very distinctive smell & taste but mine doesn't! It is always spicy but never smells or tastes right. I use dried chopped chili as well as mushrooms & peppers but it just doesn't seem right. I can't fathom what's wrong.
Any ideas please.

Oh and ideally cook in for 12-18 hours in the slow cooker so the fat properly renders.

Lots of cumin as pp say. I add ginger to mine too - and most importantly half a teaspoon of sugar.

I use grated mushrooms in mine.

Yes to cumin and paprika. Fresh coriander also good. Oregano. A bit of marmite, a bit of cocoa powder, a slosh of lime juice and a splash of tequila.

Not as sophisticated as someone these. Chopped onion, chopped pepper, black pepper, 2 tsps medium chilli powder, half teaspoon medium curry powder, good grind of pepper, then add 1lb 10 or 20% fat beef Mince, browned and drained, tin chopped toms, half cup beef stock, 2 small can chilli beans in chilli sauce, 4 squares plain chocolate, heavy pinch maldon sea salt. Summer for at least 90 minutes. Add finely chopped mild chilli x 2.

Serve with rice, add a dollop of soured cram and guac to the centre, strategically place two three tortilla shells in the middle of the sour cream and guac add a sprinkle of cheddar. Side salad goes well.

Same as a lot of the above - different dried peppers, cumin, coriander, garlic, tomato paste, a little cocoa powder or even a spoonful or two of coffee powder.

In addition, a bottle of guiness or other dark beer blends in really well.

Absolutely no mushrooms, not even dried. Dried porcini are great in a venison or beef stew but never in a chili. And where's the marmite coming from?!

Gran luchito smoked chilli paste plus cumin and coriander. Onion garlic tomatoes with either minced beef or black beans and beef stock. Marmite and/or Henderson's relish for added depth

I put mushrooms in mine OP not traditional but I love them!
Spices I use fresh chillies, chilli powder and dried chilli flakes, cumin, smoked paprika, ground coriander. I put the spices in while I brown the beef.
Garlic, onion, red and green peppers, mushrooms, beef mince, chopped tomatoes beef stock, couple of squares of very dark chocolate or a teaspoon of good quality cocoa powder, cook for hours on low you might have to top up with water a few times. Kidney beans in 30 minutes before the end, taste and season throughout.

I recommend the Schwartz mild chili seasoning mix, saute a large onion and a large green pepper to start and then follow the recipe on the packet. Oh, and use the 12% fat mince.
Chop up fresh coriander and grated cheddar/sour cream to serve.
