Don't know but don't do what I did this week and but pancakes designed for making spring rolls by mistake. We tried to make do with them but it was like eating stuffed condoms.

Chinese supermarkets often have big packs of the pancakes in the freezers - quick and easy to defrost when you want. They'll also do the Peking Duck /plum sauce - haven't been able to get a decent version anywhere else.
Re the duck - after exhaustive experimenting, I now just get duck legs (local market does them at £2.50 for 2 - Sainsburys often have them at BOGOF) rather than a whole duck - I've never managed to get the whole duck crispy enough. You get a lot of meat from the legs and it's easier to carve.

I would imagine with the fact that its Chinese New Year in about 2 weeks, the supermarkets will be awash with Chinese stuff. I know I've bought the pancakes in Asda. In the section where they have the chilled bung in the oven stuff.

Do you want to do crispy duck then?

it is pretty complicated and involves boiling and frying iirc.

buy the duck from your local chinese nd then do the trimmings yourself would be my advice? but that's not what you asked is it?

chinese supermarket for big pack of pancakes. supermarket ones are ripoff and you can freeze them forever. i have made them but it is a faff and they are never as thin.

what recipe have you got for duck?

i don't have any recipes yet, chinese supermarkets are sooo far away from me (v rural) but will try asda (good idea Mo) or wait until my next trip to Leeds.

We have two whole duck in the freezer. I like to cook, but don't eat meat, so it will be for DH.

just rub on 5spice, chuck a bit of ginger in the cavity and roast it (with rack) on medium for 3-4 hours (depends how big), whack up heat for last 20 mins if not crispy enough. i love crispy duck and have done it many ways, steamed and deep fried, half boiled etc etc and normal roasting is fine.

Nigella's new book as crispy duck...

  • 1 duck
  • 1/2 cucumber
  • 6 spring onions
  • 125ml jar Hoisin sauce
  • pancakes
  1. Preheat oven to 170C or GM3
  1. Cut off the flap of fat that hangs over theduck's cavity. Sit the trimmed duck on a rack or slotted tray (it is really fatty so needs to be raised!) over a deep tray. Roast for 4 hours.
  1. Increase oven to 220C or GM7 for a final 30 minutes.
  1. Steam pancakes or follow instructions on pack.
  1. Pour Hoisin sauce into a bowl.
  1. Cut cucumber into very fine matchsticks
  1. Cut sping onions into very thin matchsticks
  1. Carefuly remove duck from oven. Transfer onto a board, She two forks to pull the meat apart and shred it.
  1. Set everything ont he table for everyone to make their own parcels.

Have to admit though - I used duck fillet and crisped off at end in a nearly dry frying pan. And I couldn't get hold of the pancakes locally so used normally wraps.
