Anyone got any yummy ideas - Yesterday I made chickpea and chorizo soup, but dh loathed it, and it did look a bit to me too.
There must be other things to do with chickpeas???

I use them in a bean cassarole. Just fry onion, and chuck in various tinned beans such as kidney beans and black eyed beans and lots of chick pease. Throw in a can of chopped tomatoes and lots of nice seasoning. Cook for an hour to bring all the flavours together. Then serve with rice. Quick, cheap and easy.

spinach and chickpea curry is good
thunder and lightning - toss cooked pasta [maybe macaroni] with drained chickpeas , softened onion, grated chaddar cheese and chopped parsley if you are feeling posh - student/nursery grub but yummy

LIVED on 'thunder and lightning' once upon a time but just tossed in olive oil (why does that sound so gay?) and garlic and topped with black pepper. has to be eaten when really really hot. mmmmm.

bet it would be nice with cheese

blueshoes · 15/01/2008 19:22

Milge, make a healthy snack.

Chickpeas, kidney beans, raw onion (chopped finely), coriander (chopped finely), pounded chilli and garlic paste, lemon juice, olive oil, salt, pepper.

Packs a punch and very addictive.

I do a spinach, tomato, potato and chickpea curry (usually add chicken as well but can do without) which is usually gorgeous. Did a foul version of this yesterday though so make sure you get a decent recipe.

Chickpea Curry

1 large onion, chopped
1 1/2 tbsp vegetable oil
2 garlic cloves,crushed
1/2 tsp chilli powder
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1 x 400g can chopped tomatoes
1 tbsp tomato puree
2 x 400g can chickpeas
450ml vegetable stock (made with stock cube)

Fry onion in oil until soft. Add garlic and spices and cook for 4-5 mins over medium heat.
Add remaining ingredients and bring to boil, then cover and simmer for 1hr.

Tastes much better made in the morning and heated up for evening and serve with rice

and this is nice - it's one of Jamie's

Summer Chickpea Salad
Serves 4

1 small red onion, peeled
1?2 fresh red chillies, deseeded
2 handfuls of ripe red or yellow tomatoes
2 lemons
extra virgin olive oil
sea salt and freshly ground black pepper
1 x 410g jar or tin of chickpeas, drained, or around 4 large handfuls of soaked and cooked chickpeas
a handful of fresh mint, chopped
a handful of fresh green or purple basil, finely ripped
200g/7oz feta cheese
Method
First of all, finely slice your red onion. Once that is done, finely slice your chillies then roughly chop your tomatoes, mixing them in with the onion and chillies. Scrape all of this, and the juice, into a bowl and dress with the juice of 1 and-a-half lemons and about 3 times as much good extra virgin olive oil. Season to taste.
Heat the chickpeas in a pan, then add 90 per cent of them to the bowl. Mush up the remaining chickpeas and add these as well, they will give a nice creamy consistency. Allow to marinate for a little while and serve at room temperature.
Just as you are ready to serve, give the salad a final dress with the fresh mint and basil. Taste one last time for seasoning, you may want to add the juice from your remaining lemon half at this point. Place on a nice serving dish and crumble over the feta cheese.

Chickpea burritos - cook chickpeas in a spicy tomato sauce, use to fill tortillas, roll up, bake and then put salsa and melted cheese on top and grill.

notnowbernard · 15/01/2008 20:29

Put chickpeas in pan, cover with water and two cloves of garlic (peeled and whole). Bring to boil, then simer for 15-20 mins or so.

Drain. Add wedge of butter and 2 tbs of greek yoghurt. Mash.

Lovely! (And thank Nigel Slater)

expatinscotland · 15/01/2008 20:29

or just follow the directions on the back of a jar of Patak's and sub in a can of chickpeas for the meat .

milge · 16/01/2008 17:54

Thanks all - chickpea update is that I made a chicken curry, but only used one chicken breast and put the chickpeas in it. It was really rather yummy and I am currently contemplating just doing chickpea curry, no chicken. I think I will lob in some spinach for good measure as well.
DH doesn't really do pulses, and its a variation on hummous! Thanks again

ernest · 16/01/2008 20:05

that's kind. I'll dig it out. can't remember off topof head.

ps can you freeze the stuff?
