School fair baking using bananas - recipes

Cocodreams · 23/06/2022 13:20

I have a large bunch of bananas which are ideal for baking and wondered if anyone has a foolproof baking recipe using bananas please? Thinking cake, traybake, loaf, cupcake with icing etc. No nuts though.

I’m not the greatest baker in the world so I would like a recipe that is simple, tasty, and not likely to fail! I will of course test it out on the family before sending it into school for the fair..

Banana millionaire’s shortbread www.coop.co.uk/recipes/banoffee-millionaires-shortbread The flaked almonds really aren’t necessary

I find that smitten kitchen recipes always work and she has a few different types of banana bread on her site.

Nigella's banana bread is delicious. I'm a rubbish baker, but this one always seems to come out well (just don't add the walnuts if you need it but free)

Another vote for Nigella's banana bread without walnuts.

Tip though: she wants you to soak the sultanas for an hour before you start (I always forget this and don't leave enough time)

Really easy banana bread. I don't bother with the banana chip decoration but I do sprinkle choc chips all over the top once the batter's in the tin (I don't mix them or they all sink to the bottom). Tasty cake. I usually find it needs about 35-40 mins at 170 fan. I use the same recipe for choc chip banana muffins.
