We have loads of leftover cabbage and the inevitable glut of potatoes. Dh looked pleased and said ooh good you can do bubble and squeak I haven't had it in years . . .
yeah i gush ok . . .
erm (whispers to MN and not DH) How do you make bubble and squeak? mash it all up and fry it? (I had similar trouble with corned beef hash once) What I made was apparently not corned beef hash (but apparently much nicer so no worries there - however I can see an issue if I bugger up his beloved bubble & squeak!!!)

hmmm I have to admit to having never made it either.
However, I do have a solution for this. When dp requests a beloved meal that he is quite particular about, I usually suggest that he makes it so it's done "properly"

Yuck! DH likes bubble and squeak. I can't stand it myself. I think he mashes up all the veg with some pepper and an egg and fries it. You'll know you've got it right if it smells like a burning compost heap.

I think I did bubble-and-squeek last night - it's hard to tell! I had some leftover mash & some veg from sunday (broccoli, peas, sweetcorn) and some bacon rashers. Fried the rshers and cut them up. Mixed in with the mash and veg. Fried an onion, and then chucked in the mix. I think the trick is to let it crisp on the underneath, before turning it over, so that it's nice and crunchy. Keep turning and mixing until hot throughout. Serve with lots of daddies sauce.

When we bubble and squeak we simply put all leftovers into big frying pan, fry and mash at the same time. I usually serve with gravy. I think it's delicious.

I think the recipe Twiglett found is a bit 'posh' for bubble, more like fried colcannon. It's supposed to be what-ever-you-have-in-the-fridge.

Fingerwoman - like your style. It wasn't a rant at DH though. He actually requests very little from me!!! I love cooking for everyone - I was just too proud to admit I didn't know how to do this one. (I think it was female equivalant of refusing to ask for directions when lost!!!)

By the time he gets in from work and cooks it - I'd be leaving for work without getting to eat it. (although if it smells like a compost heap - may not be a bad idea!!!) I'll leave his cooking to weekends and nights I'm off work!!

OrmIran you're absolutely right, but you can avoid the lingering smell by doing it in the oven, rather than frying it.

Heat the oil in a roasting tin like you would for roast spuds, then tip in the mashed veg and bake for c. 40 mins until crispy on top. Give it a stir/flip a couple of times during cooking. We love leftovers here

We have it quite often. Cold veg (usually greens, peas carrots etc) and spud (mash and chopped roasts last time round)fried together until the bottom goes crispy. I like to think of it as a bit healthier than hash browns. I kid myself.
I have it in a sandwich with chilli sauce but I'm a heathen according to OH. I think it is a war recipe to use left overs. My mum was one of 8 kids in a single parent family so they had to 'make do and mend' and that mind set has passed down to me.

Ladies . . thanks!! OMG it was spanking gorgeous. I'm going to have to make sure there are more leftovers around here (not quite sure how - 'forget to serve it all up?)
