Help, lovely healthy veg recipes for me , dh and my lovely 15 mth old

can some also be low fat for me, as i am trying to lose weight
thanks very much, i would like to try and use meat only 3 x a week

Check out veggie food for kids by sara lewis and babies and toddlers good food by the austrailian womans weekly series. Both have sections on food to share with whole family with appropriate omissions or extras for each stage of the childs development. Both at waterstones.
Some ideas for you.
Pasta with veg or pulses and tom sauce
Cheese souflle- a doddle despite difficult reputation, just cheese sauce with egg white folded in.
Frittata
Veggie hotpot with dumplings
Stir fry with tofu
eggs florentine
Shepherdess pie(green lentils)

I make lentils once a week and it is very simple and healthy. I fry onion until softened than add garlic, then red lentils, cover them with water, and boil until cooked. I serve dc the lentils like this and then add salt for me and Dp. Before I serve ours I also heat some oil, add garam marsala and some chilli pwder mix it up and pour on top of the lentils to serve.
Anotrher veggie meal we all love is veg strudel.
I use filo pastry, 4/5 layers
Soft chhese- goats or philadelphia
Broccolli, Spinach, green beans or any other mixture I fancy
Roll up in the filo pastry and bake. It os from an old Linda McCartney recipe
Spinach and ricotta canneloni is also a good one, covered with a basic tomato sauce and cheese on top- bit fiddly but the dc love it

Sorry- I just thought of another favourite that is also fun- roast aubergines, courgette, red onion and anything else you fancy. Put them on the table with
Pitta bread and homous
everyone makes their own!!!1

mrs r, thanks so much, esp like sound of last recipe, will def try book idea, more cook books the better, canneloni sounds fab, not too worried at trickiness, as i like to think of myself as a good cook, its a great de-stressor for me
its great to get new ideas as you can get stuck in a rut at times

I know what you mean about the de-stressing side of cooking. I love being on the kitchen with the radio on, and DP entertaining the dc!
Helps me to relax......

all yuors sound great too, i am going to stock up on some more lentils ect, never taken to tofu, but prob better in a recipe, will also try

I meant the sslad for you and dh! My ds wouldn't eat it- besides marinated tofu has too much salt for him- but it a good boost for your immune system School run now but I will search my optimim health cookbook and get back to you

I think a lot of children seem to like cous cous, maybe because it is quite bland. Although it is so so messy.
Anyway I often give this to mine or a combination of this:

Cous Cous 150 grammes
A handful of frozen peas,
either sliced mushrooms, courgettes, or pepper or all three. ( 2 tablespoons worth)
Half a small onion
1/2 garlic clove.

Heat up some olive oil, fry garlic clove and then remove when it starts to soften.
Then in same oil, saute your chosen veg, adding frozen peas till last just to soften.
Meanwhile pour boiling water over cous cous to cover, maybe with a sprinkling of reducded salt veg stock granules. Cover the bowel and leave for 5 minutes.
When ready mix up cous cous and veg and serve.

I've been doing veg recipes without cheese I can't tolerate gluten or dairy, I've cut down on meat each week and feel much better for it. Try Carol Vordemans detox for recipe ideas, bump up the fat content for little ones though. I have tons of recipes but they're accross various books. 15 min goulash is my favourite: 4 courgettes, passata, onion, carrot, garlic, diced, parsley, red and white kidney beans, served topped with creme - gently fry up the veg add the toms and bingo!

Can do something similar for eggs provencal, just add peppers, tabasco sauce and less courgettes, no beans and cook on hob, make a hallow for the eggs crack them in and bake in the oven with just a sprinkling of cheese.
