how do you make meatballs?

ok this may be a really stupid question but is there anything else to it other than getting an onion chopping it up and then mixing with mince and rolling into balls?

That is all I do generally but some people like to add an egg to bind it and/or breadcrumbs to bulk it a bit...

Yes there is - you go to Waitrose - buy the things come home peel off plastic and fry whilst consuming vast quantities of wine!

You have to use egg and breadcrumbs if you are making them yourself and maybe some flaked chilli and some red wine and some herbs - Waitrose wins everytime I am afraid - M&S ones quite nice too!

No need to add anything if you don't want - you can colour the meatballs in the oven before adding them to a sauce (also stops them falling apart). 7 mins in a hot oven then 15 mins poaching in tomato sauce is my recipe.

I recommend mixing beef and pork to make them more spongy.
I also add nutmeg and (very finely chopped) fresh parsley.

I just add stock cube and worcestershire sauce and a bit of semolina (as Nigella told me to). Squidge with your hands to mix it all in and plop little balls into tomato sauce that is gently bubling. I don't add onion unless it is already cooked..

you could also try
mince
breadcrumbs
finely chopped onion
finely chopped garlic
a little beef gravy granules or pinch of salt
egg to bind
just mix all together and leave to stand for a while befor making.
The more bread you use the further they go iykwim.
I make up enough for a a couple of meals with a large pack of mince

I add an egg, a handful of breadcrumbs, chopped herbs, and a finely chopped chilli. Sometimes add bits of bacon or pancetta too - gives a bit more favour.

I think they hold their shape better if they are browned first (although some people prefer them falling apart a bit), and do it all on a hob.

Yes Twinkie, I agree. I used to make my own until I discovered Waitrose free range mini meatballs- they are delicious and reasonable too!!!!!
When I made my own I would mix egg and breadcrumbs with the meat, a little seasoning and fresh herbs, mould them fry them than add them to a simple tomato garlic and onion sauce and serve with rice. Yummy!!!!!

ok i have added chopped onion, garlic and an egg to 400g of mince

unfortunately i don't think that i chopped the onion finely enough my meatballs are a little angular but at least i know for next time

will pop them in the oven first EffiePerine thanks!! luckily i'm ok wth the sauce

A friend grates her onion to get it nice and fine. I always forget .
