pumpkin seeds - advice needed please!

I have dutifully carved the Halloween pumpkin and would like to dry out the seeds which are delicious salted, but don't know what temperature the oven has to be, whether the seeds have to dry out first, how long they stay in oven etc. Does anyone have any tips? Thanks xxx

I think Jamie Oliver tells you in his first or third book - if that's any use? He includes the details in a delicious recipe for (?) roast squash with fennel...

Here's how I make them:

I pick out all the seeds and clean them pretty thoroughly. Put them in a colander and rinse them, then let them sit in the sink for a while and drain, drying off just a bit. Then I dump them on a nonstick cookie sheet shake them until they are laying flat then sprinkle salt on them/ while wet. Bake them in the oven at about 200 degrees Farenheit and slow cook them for about an hour to an hour and a half. I flip them and re-salt, several times along the way. Then as they start cooking thoroughly in the middle I start raise the temp and cook them at 350 for about 5 minutes, until they turn a golden color. The middle should be starting to get crunchy before you up your temp...

Trying to be more helpful... have you tried the food section of bbc.co.uk? I find they usually have an answer to all my culniary Qs (admittedly there aren't many!)

It is a prerequisite to being a good american to know how to roast pumpkin seeds (we have halloween as well as thanksgiving where pumpkins are used)...so here goes. Corbin has giving perfect instructions on how to prepare the seeds. (It is essential to salt them while they are wet!) However, then rather than put them in the oven, I just put them under the grill until they are brown (10 min or so) - make sure to turn them over half way through.

Here's an EASIER way (from an American): Place a dob of butter on a baking sheet & heat in oven GM4 (or 180) until melted (usually less than a minute). Then add seeds, stir to coat with butter and sprinkle with salt. Heat at for 10 minutes or so, stirring halfway through, until they're light brown & crispy! Pour into a little bowl lined with paper towels and they will be a memory in about 5 minutes once people smell them! These may have butter, but it's such a little bit and adds an awesome flavour.
