Quick and easy breakfasts

For years I have been having porridge with various fruits and floavouring for breakfast but I am sick it now and want to have something else for breakfast but I am struggling to find and alternative. Toast doesn't fill me up and cereal seems to be full of sugar. I don't want to be cooking anything in the mornings so eggs and bacon are out. I take a yogurt and fruit to work as a snack so don't want to be repeating that and I'm just generally stuped as to what else I could be having. Any suggestions?

I often have boiled eggs (they last in the fridge for a few days) with spinach / avocado / smoked salmon / smoked mackerel. Or make a frittata in the evening and have slices throughout the week.

Amdone123 · 12/05/2022 21:16

Do you mean you're sick of porridge in any form ? Because I love baked oats. You can prepare the night before then pop in the oven whilst you're getting ready. Delicious.
This morning I made a pizza pitta - a wholemeal pitta, tom puree, sliced tomatoes, mushrooms, slice of cheese. Had with rocket. It didn't take long and was really filling.
You can also prepare mini egg n bacon muffins the night before. Lots of variations - smoked salmon, chicken, tuna.

I find it difficult if you don't want a savoury breakfast. Maybe some bran muffins that can be made beforehand?

KittenKong · 12/05/2022 21:22

Make Bircher? That’s pretty yummy.

FusionChefGeoff · 12/05/2022 21:25

I used to mix Greek yoghurt, muesli and frozen mixed berries in a pot in the evening.

Grab in the morning and by the time I got to work it was a gorgeous fruity, creamy, nutty mix that kept me full for aaaaaaaaagggess.

Beans on toast is filling and it doesn’t take long at all to microwave beans.

Bagel with cream cheese and salmon
English muffins topped with peanut butter, banana and a pinch of cinnamon www.eatingwell.com/recipe/263889/peanut-butter-banana-english-muffin/
Weetabix with your usual porridge toppings
Plain pancakes (you don’t have to make them www.tesco.com/groceries/en-GB/products/285379363) with various toppings

Omelettes are quick and easy. I have a baby square pan which makes ideal sized ones to sit on a piece of toast!

Notagoodnight · 13/05/2022 10:33

Breakfast frittata or quiche. Make bulk, Cut, freeze and either leave in the fridge to defrost overnight or nuke in the microwave for 2 mins.

Depending on how you make it can be very low calorie, my crustless, cottage cheese, mushroom and onion one is only 100cal for a really decent sized slice

I know you say you don’t want to cook in the mornings, but we have a boiled egg machine which you just pop them in & it beeps when they’re cooked, so you don’t have to watch over them & can get on with getting dressed etc.

I batch cook breakfasts in advance for the freezer for school mornings (usually leave to defrost in fridge overnight but can also be cooked straight from freezer on microwave or toaster. Sod for an hour at the weekend to fill a drawer with breakfasts for the week;

egg muffins; slice and English muffin in half and add a cooked fried egg and a cheese slice. Can add bacon or sausage too. Wrap in kitchen paper or a napkin and microwave for 1 min

breakfast wrap; whisk a couple of eggs, throw into a hot pan and quickly place a tortilla wrap on top whilst it’s still wet. Cook for a minute and flip over. Gold, cool and freeze (excellent toasted). Again, can also add sausage or bacon (cook it first and add the egg to it) or sprinkle cheese on top of the egg before the wrap). Can be toasted in the toasted (as long as you hold it right and place it in toaster open-side-up)

Healthy ‘milkshake’; soak a handful of oats in some water or milk overnight, throw in a blender with a banana, raw cacao (or cocoa), tblsp peanut butter. Optional extras are a tblsp milled flaxseed/mixed seeds, yoghurt, avocado. Makes a yummy chocolate milkshake

make a batch of pancakes at the weekend and freeze, to be defrosted and microwaved. 1 cup s/r flour, 1 cup milk, 1 egg. Basic mix but I add mashed banana or grated apple and also now make my own ‘flour’; a mix of ground oats, wholewheat flour and white with baking powder. Can also make with some milled seeds added

Cereal in the overall look of your diet isn't bad at all.if you find a cereal you like go for it.its demonized, sugar is the GO TO demonized good of this decade.it will be kept next, then back to fats or carbs and suddenly cereal will be great.cereal.is.fine.

FleeceNavidadfromtheSheep · 13/05/2022 17:48

Muesli soaked in fruit juice, big dollop of Greek yoghurt on top and whatever fruit is to hand (sliced bananas, blueberries, tinned pears in juice).

Snozwanger · 13/05/2022 17:59

Overnight oats, scrambled egg on toast (very quick), homemade granola with plain yoghurt, Weetabix with a chopped banana (one of the less sugary cereals I think).

Overnight oats is one of my favourites and feels more nutritious as I can add ground seeds to it for Omega oils and then whatever chopped nuts or fruit on top. I usually include grated apple for the sweetness but you can add honey or maple syrup to your taste.

JurasicPerks · 13/05/2022 18:09

I wouldnt have thought scrambled eggs took any longer than porridge?
Avocado on toast?
Cheese in some form?
Baked beans?
Sausages cooked in bulk at the weekend for a few days.

coffeeschmoffee · 13/05/2022 18:14

I always have either half an avocado on a slice of rye toast or 2 scrambled eggs on a a slice of rye toast. Delish and keeps me full for ages. And lowish calories and v low sugars.

motherofchihuahuas · 13/05/2022 18:20

Last few days I have been having chia seeds soaked in chocolate flavoured out milk. Just mix two table spoons in a pot and add the milk. Prob about 200ml I don't measure just judge.

Then I put mixed berries on it in the mornjng. I really like it. The consistency is a bit weird like tiny puffed up seeds that are soft but I like it.

dancemom · 13/05/2022 18:53

Today I had crackers, chopped cold chicken breast and some cheese, it was lovely

siblingrevelryagain · 15/05/2022 11:59

Last night made a strata (google a recipe; it’s basically a savoury bread pudding) and baked it this morning-ate it today but it struck me that it could also be portioned out and warmed up each morning

it is a good way to use up the crusts off a loaf if you don’t like eating them

valbyruta · 17/05/2022 19:23

Peanut butter on toast, a banana and a glass of milk
Toasted cinnamon and raisin bagel
Ready made tortilla

valbyruta · 17/05/2022 19:25

Left over pizza 😀

Say what!? I am not sure I've heard of such a thing but this sounds MARVELLOUS. (except for my v limited storage and counter space). <Heads immediately to Lakeland and Amazon to consider options....>

We batch cook muffins sometimes and freeze them. They can be defrosted in microwave or overnight.

The trick with toast is to add more than just a bit of jam or marmite. Peanut butter, boiled eggs, avocado, smoked salmon are all good options.
