Here is a true southern dish that we make every year at my house for Christmas Dinner.

Holiday Sweet Potato Bake

2 (16 oz) cans cut sweet potatoes, drained
1/3 cup evaporated milk
1/3 cup apricot nectar
1/4 cup butter or margarine, melted
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup chopped pecans
1/2 cup golden raisins
1 cup miniature marshmallows

can also add:
1/2 cup flaked coconut
1 can crushed pineapple (drained)

Combine first 7 ingredients in a mixing bowl; beat at low speed of an
electric mixer until well blended. Stir in 1/2 cup pecans, raisins (and
pineapple and/or coconut if desired); spoon into a lightly greased 8 inch
baking dish. Sprinkle with remaining 1/2 cup pecans. Bake at 350 degrees for
25 minutes; sprinkle with marshmallows and bake an additional 5 minutes.

Here is the recipe for my (in)famous cranberry sauce as well:

Cranberries Braised in Red Wine

16 oz. bag of fresh cranberries
1 cup of red wine
1 1/2 cups sugar
peel of an orange (finely chopped)
1 cinnamon stick

No, both good ones, Zephyrcat. I did make a yule log for DH's office in Austin and it was quite a novelty! We also had a lot of confusion over Christmas crackers. DH kept talking about them and I assumed he was talking about crackers as in Ritz Crackers!

Seriously, though, like the braised cranberries, but can't do a recipe for cranberry relish without Grand Marnier.

Actually we do have mince pies, generally mince meat but my dad likes to do it with pears instead (very yummy!).

How do you make Christmas pudding?

Generally I buy ready made xmas puddings, then we serve it with fresh cream - after having poured brandy all over it and set it on fire!!!

Mince meat and pears sounds interesting, but I don't like dried fruit. Might try it for the ILs though.

Christmas pudding is a dome shaped fruit cake that's steamed (nothing like good old Jello pudding!). It's made months in advance, usually using lots of booze and is served with brandy sauce. Brandy is poured over the pudding, the lights are dimmed and the pudding is lit as it's brought to the table. Very festive. Unfortunately it's full of dried fruit so not something I like to eat.

Actually tex there's no dried fruit in minced pears. I don't have the recipe on hand but my mom made some last month. Fresh pears run through the food processor and lots of spices, raisins, not sure if anything else. Then she processes it like any other canning (jelly etc.) to use for Christmas and other special occasions.

Thought about you guys. I've been up to my elbows in sweet potatoes and corn bread today. We're celebrating Thanksgiving tomorrow with some friends so I've been cooking up a storm today.

Jabberwocky, made your Mom's dressing and it looks gorgeous. I'm sure it'll be a big hit.

Also made broccoli (sp?) casserole, which is a must for Thanksgiving at home. Hope it all turned out yummy.

Zephycat, I found out that I can substitute molasses for treacle. Looks like that Xmas pudding is on the menu! Thanks again for the offer of sending some. Will let you know how it turns out.
