do you keep left over meat fat ?

say when you roast a chicken or something if you leav then roasting tray and then the fat hardens [like lard] do you keep it? and if so what do you do with it ?
could i use it to rooast potatoes etc ?

how long could i keep it for and can it be frozen?

I use the fat off beef because it makes beautiful roast, I don't eat lamb but i've heard the fat off that is quite nice. Chicken fat I wouldn't keep though because I don't think it's that nice. You aren't suppose to tip it down the sink though, although you probably already know that

think this is dripping. In the olden days people used to keep it in a bowl on their work surface this used to be topped up all the time. My grandmother had some that must have been at least 40 years old! Used to be used for roasties or melted into toast

what is really tasty is to take the tray with all the fat and stuff from the roast and put it in the oven to melt again. Meanwhile slice some left over boiled potatoes. When the pan is sizzling add the spuds and 15 mins or so later you have the best fried potatoes

i worked in a tea room, old people were always asking for dripping on toast, yum.

you can mix it with seeds for the birdies.

beef fat is great for yorkshire pud and roast potatoes.

I find lamb fat a bit too greasy

goose and duck fat are also good to use on roasties (altho it does make the house quite smoky) - you can freeze it. divide it and put it in little bags so that you don't have to defrost the whole lot when you need it.

I don't think chicken fat keeps very well, but you can use it to mix as a warm dressing for a chicken salad.

We use fat for roasties, or to saute onions etc, but if I have some that's a bit past it, I melt it and mix it with bird seed or peanuts in a small tub, the dd's help, and we make our own fat balls for the poor starvin' birdies.
