In a bit of a rut for gluten + dairy free

I'm a few months into dairy-free/gluten-free, and pretty much adjusted now but we've got into a bit of a rut with meals again.

We mostly eat naturally df/gf foods (meat, fish, vegetables, potatoes, rice etc). We tend to have baked potatoes about once a week and lots of curry and rice, salmon/rice/green veg combos. I'm the only one who's intolerant so we sometimes have pasta (g/f for me, normal for the rest) or fajita-type meals (I have it without the wraps and cheese!)

But yeah, in a bit of a rut and could do with some inspiration for meal ideas. Any ideas??

How about a tortilla - fried cubed pre-cooked potatoes with onions, red pappers, peas and fresh herbs, covered in beaten egg and cooked in pan then finished off under grill. Have with mixed salad.

Peppers stuffed with mince, rice, mushrooms, nuts, served with salad or wilted greens tossed in garlic oil.

Flat fish, like sea bream, dipped in cornflour flavoured with toasted seeds (coriander/fennel/sesame/caraway etc Shallow fry. Serve with wedges of lime or lemon, oven chips or sweet potato wedges and veg or salad

Butternut, pea, red onion and paprika spiced risotto with fried chorizo.

I make my own Indian chutneys and pickles so just use whatever I have in the fridge instead of the ones suggested. The maggi tamarind sauce you can buy in supermarkets is also good but definitely needs a pickle to stop it being too sweet.

Have you got the Becky Excell book How To Make Anything Gluten Free?

Although it's primarily gluten free most of the recipes are also dairy free or have dairy free adaptations. It's got a whole section on 'fakeaways' and there's also good pastry recipes for pies etc.

We aren't dairy free but we are gluten free. I don't faff about with two lots of spaghetti everyone just gets gluten free.

Typical meals for us that would be dairy free

Spaghetti bolognese
Risotto
'KFC' and chips (from the becky excellent book)
Chicken chow mein (boil gluten free spaghetti and then let it dry and use instead of noodles - also from Becky Excell)
Patatas bravas and meatballs
Cottage pie (use a dairy free spread for the mash)
Thai green/red curry
Gluten free yorkshire puddings and sausage in onion gravy
Steak chips and gluten free onion rings
Gluten free scotch eggs and salad with spicy tomato chutney
Salads generally
Meat and vegetable skewers
Chilli con carne

Stir fries would work, served with rice noodles (or rice), mix it up using different veg, meat (chicken, pork, beef) or fish ( salmon, prawns) and different sauces (there are gf out there but easy enough to make your own).

Fishcakes, if you like them breaded you can use gf breadcrumbs or just lightly seal the outside in a pan and then bake. Lots of variations, I'm going through a sweet potato, tuna and chilli phase at the moment. I also enjoy cod with with potato, lime, chilli and chives.

Shakshuka is also lovely.

Cod wrapped in prosciutto and baked.

And now the summer is on its way, bring on the salads! Proper nicois with tuna steaks, or tandoori chicken, with green salad, mango and raita.

Traybakes such as sausages with roasted sweet potatoes, chicken thighs with lemon potatoes and garlic, salmon with green beans and cherry toms etc (The Roasting Tin books are v good for this)

Roasted pork fillet with balsamic onions (same tin)

Rice pilaf with whatever protein you fancy (Nigel Slater recipe)

Spicy lemon and garlic prawns.

Large raw prawns. Marinate in crushed garlic, pepper, celery salt, chilli (flakes and on red chilli sliced thinly into rings) cornflour and a touch of grated unwaxed lemon with lemon juice to bind.

Heat up oil in a shallow pan, gently put them into the oil in small batches, removing when lightly browned and sizzling, drain on a rack over kitchen towel so they go crispy.

Serve with rice, cherry tomatoes, sliced spring onions, red onions, red peppers, crispy/bitter salad leaves and more lemon juice, etc.

Buttanesca. GF pasta, diced tomatoes, onion, garlic, chilli, black and green olives squashed a bit, capers, anchovies.

Risotto. Asparagus and pea, smoked bacon and mushroom, etc.

If you have lots of rice, you could make some arancini. Form into balls, dip in egg and into GF breadcrumbs. Let's face it, most GF bread is practically stale by the time you open the packet, so they're not hard to make. Fry until crispy and gold, have with salad.

Casserole type things. Make your basic tomato sauce with onions, tomatoes, lots of tomato puree, olive oil, garlic optional, as would be carrot/celery. Use to cook pork or chicken with a couple of Bay leaves, olives, capers. Or sausages and sage or caraway or fennel, add loads of courgette and aubergines. Or eggs (lid on to poach, could add cinnamon and cumin). Or use it to bake aubergines. Or lamb with rosemary/thyme/oregano.

Maybe look into East Asian cuisine. From what I understand East Asians have a much higher rate of lactose intolerance than the West, so you will find more dishes that exclude dairy. They also use a lot of rice and rice noodles, so automatically avoiding gluten. Also, their food is just delicious! Check out Marion’s Kitchen on YouTube for inspiration.

Ooh just remembered this honey mustard chicken traybake.

I'm a veggie but prepared dinner for a neighbour with young children for a few weeks after she had an accident. They were old enough to get it out of the oven but didn't have a clue how to cook. The honey mustard chicken was most popular (with some extra potatoes parboiled, smashed down and roasted in oil another small tin). A couple of others are below.

There are some good bread like things that are naturally gluten free too. Corn tortillas for your fajitas, Or french socca (chickpea flatbread that I half treat like a pizza and top with roasted veg, with chorizo for DH). Also works well paired with early drinks in the garden...
I learned to make Banh Xeo in Vietnam and it was surprisingly easy (just fry very hot so there are crispy bits), the pancakes are made with rice flour and coconut milk.

Becky Excell is worth following on Instagram. She’s very good and has lots of ideas.
I was toying with the idea of getting her book. I think I will now!
