Has anyone made chocolate truffles?

Saw this recipe on the Waitrose website.. didn't realise the ingredients were so simple.

Does anyone have any tips on making them? Especially when it comes to the decoration! How do you get them covered evenly without leaving finger prints??

TIA

Ooh, just wanted to say, I like your Xmas name Cadbury - only just seen it .

Cadeauxbury · 02/12/2004 15:27

Thank you very much. I'm rather pleased with it myself. How are you today stuff?

I'm ok, my wisdom tooth feels miles better and I'm off to Copenhagen for the weekend tomorrow - can't wait .

Rubber icecube trays!

Coat the inside with melted chocolate, leave to set. Fill with truffle mixture, leave to set. Fill up to the brim with melted chocolate, leave to set and pop out into little cases. I need to try this again as I left them to set in the fridge and the chcolate had a bloom on the outside. I think it was just because of the fridge but wonder if it was to do with the ice cube trays.

Thanks so much for the tips. I really appreciate it! I have also read on a truffle webpage (I've read so many now I have no idea which one it was) but it says you can also roll them once, place back in the fridge, and then roll a second time to make a more accurate shape. I have a melon scoop too so will try that. Don't have any fancy icecube trays but may just pop out to buy some!

FYI, dustings I have tried are: cocoa, drinking choc (yummy!), cinnamon sugar, choc sprinkles, crushed hazelnuts, white choc.
Does anyone know where I can buy vanilla sugar? And how do you think I can get the ganache to taste vanilla-ery? I LOVE the thorntons vanilla truffles and would love to make my own..

I'm sure you're making lots of other nice goodies for xmas, but I feel like sending you all a bunch of my truffles as thanks for your help! I wouldn't be able to do this without it!

vanilla sugar - buy vanilla pods, buy sugar. slit vanilla pods, scrap out seeds and mix into sugar. Or shove the whole pod and sugar in a blender and blitz it. Or store the pods in a sealed jar of sugar.

I think I'm gonna try out all the tips here before christmas!

that recipe on waitrose is pretty much exactly how i make my chocolate truffles. i use either chocolate shavings or cocoa powder as coating.
