What can I stuff a chicken breast or thigh with?

I love chicken! DH is a bit fussy about it - he doesn't like it too plain or too dry or on the bone etc, etc. Usually I just make chicken fajitas or honey & mustard chicken but I'm getting a bit bored. So I found some nice looking boneless chicken thighs with the skin on that I thought might be yummy stuffed. Only problem is I don't know what to stuff them with. We used to love chicken stuffed with mushrooms, shallots & goats cheese but as I now keep a kosher home I'm not allowed to combined chicken with anything dairy. So, what can I stuff my chicken with that doesn't involve cheese, chunks of tomato (although tomato sauce or the sun-dried variety are ok), spinach or courgette? All suggestions gratefully received!!!

What about something with sun-dried tomatoes and olives? How would that work? And without the cheese, what's going to hold it all together?

make a herb 'butter' with parev marg?
or use caramelised onion chutney (or indeed any chutney)
homemade (hence sans cheese) pesto? with pine nuts?
moroccan style spiced chopped dates / apricots etc?
we do a lovely rub for roast beef using anchovy paste - doesn't taste fishy, just salty and savoury iyswim.

and where did you find them? I much prefer thigh meat to breast for almost any chicken dish but boneless thigh is hard to find and they're a bugger to fillet yourself.

Don't know - they just appeared in the deli recently. I'm guessing they come from London or Manchester but I don't actually have them in the house at the moment so I can't check the label. The pesto/pine nut thing sounds good - I might try that. Thanks MrsB!
