Bitter marmalade?

My Mum used to make the most delicious bitter, home made marmalade. Sadly those days are in the past. I don't have time to make it myself with 3 little ones.

Does anyone know of any nice bitter marmalade you can buy which maybe tastes a bit like home made?

Thanks in advance for any suggestions.

Yes! Wilkins Tawny Marmalade. It is lovely. I could only get it at Waitrose though.

I am a regular marmalade eater and In planning to make my own this summer. My sister in France buys creates of Seville oranges from Spain and makes her own so b I'll cadge the recipe from her. I bought marmalades from every main supermarket and decided my favourites - surprisingly - are both Asda Extra Special - the "Seville Orange Breakfast Marmalade" and the "Three Fruits Marmalade" (Seville Orange, white grapefruit and lemon) so perhaps try those.

The "making your own" process is a lot quicker if you buy a tin of prepared oranges (Robertson's Ma Made ones are good). They have added pectin so you should be able to vary the amount of sugar you add without affecting the set too much.

What I disliked about a lot of the ones I tried was that they were quite rubbery - the Asda ones are quite a soft consistency.

For bitter marmalade, look for Seville orange or grapefruit (divine).

Making it yourself is not as long winded as it used to be. Not the season now for seville oranges but next Christmas buy a bag or two and throw into freezer until ready to use them. Then look up a slow cooker recipe, you put the whole and frozen fruit into the slow cooker and let it do it's thing, when they are really soft it's so easy to scoop out the pulp and cut up the rind, then it's just the add sugar bit and boil. Not half as time consuming or hard work as trying to cut up the fresh uncooked fruit and peel. I have been making marmalade this way now for past few years instead of other way, in fact if you see any of those Food Factory type programmes on tv this is how the big producers make marmalade, fruit frozen and boiled before cutting up. I have a couple of bags of oranges in the freezer at the moment, this has reminded me to make a batch :)

I agree with @marylou25 it really doesn’t take long with the whole fruit method, I don’t have a slow cooker so just simmer them gently for a couple of hours. The taste is so much better than any commercial marmalade, but definitely invest in a sugar thermometer as @ChiefInspectorParker says.

FYI: Add a Waitrose one I've just found "La Vieja Fábrica" I'd rank it as a new favourite - the thick cut peel has a great flavour and, just as I like it, the marmalade itself is quite a light jelly.
