Hob has broken, not going to be fixed for a week, has anyone got any full meals (eg sides, veg etc) that can be done just using an oven? My mind has gone blank Blush

The Roasting Tin series of books would be ideal for this situation. Any traybake would work well. When I used to eat meat I loved sausages, sweet potato, onion and apple. Salmon, lentils, aubergine and courgette is nice. Or chicken, potatoes, broccoli and lemon. You just need to Google the cooking times of the different ingredients so that you have them all ready at the same time.

Get a throw away bbq for one night.

Chicken breasts stuffed with Boursin cheese and wrapped in Parma ham is gorgeous.

You can roast broccoli, green beans, peppers, aubergines, courgettes, peppers etc so they're good veg.

Plus all the roots: carrots (take longer than everything else so cut up smaller), parsnips, squash, beetroot, radish (!), potatoes obvs

Then do oven baked chicken / fish / pork / roast beef / gammon / sausages / bacon / black pudding

We've started using Green Chef recipe boxes and they do a lot of 'topping sauces' for oven baked meat to jazz it up ie:

Chimmichuri - garlic, lime, chilli, coriander, parsley, chilli flakes, olive oil blitzed in a mixer

Salsa verde - chives, parsley, spring onion, whole grain mustard, olive oil

Crumbled blue cheese & walnuts / hazelnuts on pork

Asian - chopped peanuts, chilli, lime, sesame seeds, olive oil

They also do a lovely cavalo Nero salad just massage leaves in oli (remove stalks) then add warm mixed roasted root veg with dressing of whole grain mustard, red wine vinegar, lemon juice and olive oil. Then finish with walnuts and blue cheese or feta. Gorgeous with simple
Baked chicken / pork / fish.

Thanks all, amazing ideas, I'm so hungry reading these! Just been boring with chicken thighs and sausages so far as not much food until I get paid, but some fab ideas to try!

If you like asparagus (in season, food of the Gods) ... then that roasts very well. Just 7-10 mins in a hot oven with a sprinkle of oil and black pepper. Broccoli and cauliflower also roast well.

And tray bakes, as everyone says above. I love roasted veg (courgette, peppers, aubergine, tomatoes etc) with feta or halloumi added for the last ten minutes. Served with crusty bread. Delicious.

Dont forget your slow cooker if you have one

Also if cooking veg in the oven and you dont want it properly roasted per se, you can wrap it loosely in foil and it sort of steam/bakes

Oven baked risotto would be useful for you, plenty of recipes online.

Dishes such as coq au vin (or any casserole) served with potatoes Boulangere, or perhaps cassoulet style dishes with beans or lentils cooked in one pot.

Cottage pie or shepherds pie would be economical.

Have you got a microwave, as they are very convenient for vegetable cooking.

Remember u can cook veg in microwave so it doesn't just need to be apt for roasting

Roasted vegetable ratatouille- roast veg then chuck in tin of chopped tomatoes herbs and back in the oven I add chickpeas to make it more substantial.

Pork tenderloin with spinach (it's really cheap and 20-25 mins to cook)

Salmon tray bake

Whole Cauliflower marinated with yogurt and curry powder baked is delicious

Baked eggs either tomato or cream sauce options

Cous cous just needs a kettle cover with a cm of water and put clingfilm ontop for 10 mins
