After last nights 'pasta' disaster I need some inspiration.

We dont eat red meat anymore, and I'm not a big fan of pork.

Would like some suggestions for easy meals I can cook our fave at the moment is chicken breasts smothered in pesto with roast veggies and potatoes but its becoming a bit boring.

Baked sweetcorn:

1 tin of creamed corn
1 tablespoon of margarine
2 eggs
1/2 cup sugar
2 tablespoons flour
1/2 teaspoon bakingpowder
pinch of salt
1/2 cup milk

Mix everything together except flour. Mix flour with bit of cold water. Add to mixture and mix.
Bake in greased oven dish till brown on top.
Bake at 180degrees Celsius.

will go nice with chicken

My fav quick meal is Chilli and cornbread bake. I make Chilli and put it in a casseole dish and pour over Cornbread batter then bake until the carnbraed is ready. Its lovely and so easy

Can you get the Blue Elephant range of Thai food preparations at your supermarket?

I highly recommend the Thai green curry (with chicken breasts) and the cashew nut stir fry (again with chicken breasts). You can make the chicken dish while the rice is cooking - 15 minutes start to finish.

I do breaded veal escalopes with green beans/salad and rice.

Last night I did skate (15 mins in a very hot oven) with mashed potatoes and anchovy and rosemary sauce.

My girls always ask for a "Mummy's picky dish"
Basically it's one of those big plates that are split into about 6/7 sections and filled with a variety of things. Usually a good one to clear out the freezer.
I put things in like:-
Fish Fingers
Bread and butter cut into small pieces
Chicken Nuggets
Slice apple and banana
Grapes
Smiley Faces
Cheese Cubes

Usually put a good dollop in the centre of the plate and they absolutely love it. Not much washing up for me either.

one pot wonder.10 mins

boil water for favourite pasta

add pasta cook for few mins
add couple of eggs..cook couple more mins
add frozen peas near the end

drain

shell and chop eggs
add couple tins of tinned fish (we like makerel or tuna)
splosh olive oil all over and season..can add capers/olives whatever you like

we eat a version of this at least once a week

If you can find cornmeal you can make cornbread but I can't ever find it here. I actually order a batter mix online. Its called Jiffy Mix for corn muffins and you can buy it here www.americansoda.co.uk/uk/American-Soda/Home/Groceries/US-groceries/default.aspx

I buy like 30 boxes at a time. I use it for loads of things

Chicken, noodles and passata

CBR or corn bacon and rice
fry an onion and 6 slices of back bacon chopped up with the scissors. add a couple of handfuls of rice and stir into the onion and bacon( about 100gms rice per person is about right)
add 1 tin of sweetcorn
add a veg or chicken stock cube and boiled water from the kettle to cover (about an inch of water)
season with lot of black pepper and a dollop of butter.
when the rice is ready and al the water absorbed( about 15 -20 mins)You may need to add more water during the cooking time.
serve

Jacket potatoes are always a good one in our house. toppings are usually, beans and cheese, tuna, coleslaw. they're all dead easy which ever one you go for.

I love Kidneys in red wine -'tis very cheap too.

I cut/fry the Kidneys with onion
Add vegies that you want with stock and red wine
Leave to reduce
Serve with mash potato

Pancakes too.

You can make a batch and freeze them have done so this evening. St Delia has a good receipe.
You can add savoury things or sweet things as you'd like.

A pancake is for all the year, not just for shrove tuesday!

Have just made a very quick and easy veggie chilli, using soya mince.

Heat up soya mince in a bit of oil
Add spices: half teaspoon each of ground cumin, ground coriander and ground cinnamon
Add 3 cardamon pods
Stir in a drained tin of mixed beans
Stir in passatta
Add about 60ml of sweet dipping sauce
Add red chilli flakes (or fresh chilli) to taste (optional - I don't bother as me and DD don't like the heat)
Then cook for about 15 minutes max.

Serve with rice.

I also have a very yummy mushroom, parmasan and sun dried tomato rissotto. Got it from a MNetter. Will tryand find recipe as it is delish!

kidneys not our thing sorry, I can barely manage chicken without vomiting

Fish pie.
Poach smoked haddock in milk for 5 mins then flake (remove bones) into an oven proof dish, add peeled cooked prawns and flaked salmon fillets, frozen peas, and a few chopped shallots pour over poaching milk mixed with a couple of dollops of single cream, top with mashed potato and grated cheese. 40 mins in moderate oven until chees is bubbly and golden.

Bean bake. Put the following into a casserole dish:

Some cooked veg - anything you have really, but I have used: courgettes, aubergines, red peppers, broccoli, spinach, broad beans, cauliflower, carrots.
A can of mixed beans (eg kidney beans/chick peas etc)
A can of chopped tomatoes
Chilli powder or harissa paste to taste (I use about 2 teaspoons, but like it very spicy)

Mix them up. Cover the top quite thickly with grated mozarella.

Bake uncovered at about 180 degrees for 20-30 minutes (fan oven times) or until the cheese is nicely browned.

Delicious!

salmon tagliatelle goes down well also.

Onions,garlic, button mushrooms (optional) couple of diced salmon steaks. Fry it up with a bit olive oil and lemon juice. Add double cream, parlsey and chives and mix with the pasta. Mmmm my mouth is actually watering

chicken breast sliced open
stuff with soft cheese/philadelphia (i use the garlic and herb one)
wrap in bacon.
bake in the oven for 45 minutes

serve with jacket potatoes and salad, or chips, or veg, or pasta. goes with pretty much anything!

salmon fillets with a pesto crust are nice. Mix breadcrumbs, grated parmesean and sunblushed tomato paste together and spread on a salmon fillet then bake in the oven. Serve with sauteed potatoes and salad.

COV i like making fish pie but the white sauce drives me nuts and takes so much bloody effort. Can I really just chuck on the poaching milk and some cream?
