Vegetable Wellington/Plait - will my adaptation work?

I found a lovely recipe for a Veggie Plait which I am hoping to serve for 8 at weeeknd but I have some doubts about whether or not it will work.

The veg are put on a pastry base, topped with a cheese mixture (a bit like Boursin) the pastry is plaited (as in a sausage plait) and it's then baked and in the picture the cheese mixture makes a wonderful sauce.

My thought with this was that the cheese will melt and leak out of the plait whilst it is cooking, so I wondered about putting the cheesey stuff in the middle of the veg, and forming a sort of sausage of veg and cheese with the cheese in the middle, then wrapping it in the plaited pastry and bakign it.

What do you think?

and what would you serve with it for 8? New potatoes and green salad?

Yes that would work. Or try putting cheese on bottom or layering. I would serve with green beans and new pots annd possibly a sauce like onion or cranberry. Check out Rose Elliot books for other veggie inspiration.

Id use a mozarella and ricotta combination, then it shouldn't melt out. I use that for lasagne, and it doesn't run out. New pots and salad sounds good. Def need a sauce though.
