Just got a breadmaker

Just as the title says.

The booklet that comes with it has quite a few recipes that ask for powdered milk, I'm lactose intolerant can I just leave it out or is there something I could use instead?

It's a Russell Hobbs 23620 Compact Fast Bake Bread Maker in case someone else has this one.

I've only made one loaf so far and I didn't read the instructions properly so I put cold water in, it still baked and tastes good.

You do not need any milk in bread.

They heat the container anyway so cold water is fine.

Despite what the recipes say, you don't need milk or sugar in any bread. The milk powder makes it stay softer longer I think, it doesn't effect the taste and fresh bread rarely lasts longer than an hour in our house so lasting isn't relevant.

You do need flour, salt (to make gluten strand thingies), water and some soft of fat (i use olive oil). I always use cold water, can't be faffed trying to warm it.

Over lockdown I used it a lot to make pizza dough so the kids could decorate their own pizzas, and I discovered it did relatively good french bread (you have to take it out for the final rise and bake in the oven, but worth it when we couldn't go out). Otherwise, I just enjoy the bog-standard bread recipe: 500g flour, 1tsp salt, 2tbsp oil, 350ml water and 4 hours.

So I can just leave it out? That's good.

The booklet says olive oil but the first one I made was a premixed bag, which I realise is as much of a con as Yorkshire pudding mix but I was a bit excited.

I've not made bread for ages due to arthritis so having something else do the kneading is great.
