Fridge broken. Can I store (opened, lid on) jarred olives and jarred sundried tomatoes at room temp?

And, if so, for how long? Both jars say to store in the fridge once opened, so want to be sure I'm not going to poison myself if I leave them on the counter for a few days!

I own dozens of olive trees. Olives have to be cured in brine for months at room temperature before they are edible, and they are stored in brine, at room temperature, once they've become edible. They keep like that until the following year's harvest is available. It's been done like that for centuries, long before refrigeration. I've never killed anyone yet.

As long as they remain underwater they'll be fine, although you run the risk of mould developing on the surface. If that happens, just pour the top layer away.

The tomatoes I'm not sure about, but I'd suggest keeping them under a layer of oil. After all, sun drying is a preservation technique.

I was coming on to say similar to @Otherpeoplesteens that DP's greek family never put olives in the fridge and the last time we came back from a trip to Greece I was sent with an ice cream tub of olives and instructions to top them up with olive oil when I got home!

I would imagine exactly the same for the tomatoes.

I add a layer of olive oil to pesto and find it keeps for ages in the fridge. Lots of things, with a good layer or brine or oil to protect them can last much longer than we expect in the 21st century.
