How do I roast a whole butternut squash?

I bought it mid December too - do you think it's ok still?? It seems ok from the outside

peel it then cut into chunks, bin seeds etc and raost with a bit of olive oil

Or, Split it in 2, hollow out the seeds, score it, drizzle some oil over it and chuck it in the oven, 200 degrees for 40 mins-ish. I sometimes put crushed garlic/chilli flakes on it at the same time so the flavours get absorbed.

They last for ages.
We had one last week which I had brought before xmas.

Or if you HATE your kitchen with a vengeance you could try pop it whole in the microwave and run and hide.

You'll know if it's ok when you cut into it. Chop in half, then into pieces. Cut away outside 'skin', then coat chunks with a good glug of olive oil on a roasting tray. You can add a sprinkle of rock salt, freshly ground pepper & a pinch of nutmeg. Bake on med-hot oven for 20mins or more, depending on size of chunks.

I want to avoid cutting as much as possible because they always get the better of me - can't I just pop the whole thing in to the oven?? At best i suppose I could cut it in half

i've just done one this morning and made soup. cut it in 4, scooped out gunk, roasted with olive oil, then peeled the skin off after it was cooked, much easier to do afterwards as its softer and comes away leaving all the flesh behind

Or be really naughty, peel, put in dish drizzle with melted butter and a tsp of golden syrup, cover in tinfoil bung in th eoven for a hour, to die for.

I can NEVER manage to cut a whole butternut squash in half, always have to get dh to do it. I have since resorted to buying the ones that come pre-halved. Not much help really...sorry. Have you got a big strong dh/neighbour/passer-by who could do it?

cut it in half drizzle with oil, salt and pepper and roast it.
When it goes a bit soft scoop out the seeds first and chuck, scoop out the flesh, mix with pumpkin seeds/fried mushrooms/fried onion/bacon and chuck back into the skins and sprinkle with cheese. put it back into the oven till the cheese melts.

You need at least one large sharp kitchen knife! Squashes tremble at the sight of me. I've never met a squash I haven't bested! Seriously, how big are you talking about? If you really can't cut it, smash it on the ground (outside, of course).

Buy it ready cut, for some reason unknown to man they are too bloody hard to cut.

I find the easiest way of peeling is with a veg peeler. Don't usually have problems cutting in half - as long as you have a sharp knife and put it on a chopping board, should be OK, even if you stick knife in, cut downwards, take knife out and put it back in where you started but facing the other way and chop that way...

cut in half
smother on a little olive oil
perhaps some paprika
shove in hot oven
scoop out when soft/browned
but you can eat the skin when soft

forgot to mention: scoop out pips before cooking, that's easy. unlike the deadly attempts at peeling I've made in the past..

My problem is that when I stick the knife in, it gets completely stuck and there's nothing else I can do but give in! I truly am a weed.

Just give the squash a wash and put the whole squash into an oven @ 180 degrees for about an hour...
