What to do with a tub of mascarpone?

... besides just eating from the tub 😉. I think I bought it for some sort of cheesecake but ended up using a different recipe. Not a big fan of tomato & mascarpone pasta. I've got most basics in & some frozen berries. Any suggestions? I assume I can't freeze it (as it is in the tub, not as ice cream or anything as freezer is rammed)?

If you have the cookbook East by Meera Sodha, she has a delicious recipe for doriyaki pancakes with a blueberry mascarpone filling. I think the filling was just the mascarpone mixed with some cooked down blueberries and some sugar for sweetness.

Melt it together with an equal amount of dark chocolate. Either eat warm straight from the pan or pour into ramekins to set.

Thanks all 🙂 - some good suggestions there! I've no biscuits or crackers in, so no cheesecake this time around (though I love a good cheesecake).

I don't have East (yet!!) but googled and found her pancake recipe in the Guardian (different filling but I'm sure I could cobble something together!). I'm leaning towards either that or the Mary Berry carrot cake as I also have bananas needing to be used.

Pizza's a good shout but on the menu for later this week and it'll be out of date by then. And I've bookmarked the lasagne for another day as that looked delicious too.

Oh and I would never have thought of putting in cauli cheese but going to try that soon! Love cauliflower cheese but only had it a couple of days ago.

I don't think I would worry about the date on mascarpone - I may be too chill but if it's unopened I wouldn't even have checked the date. I reckon it would be fine for at least a week past the use by.

If I have mascarpone/philly/creme fraiche that needs using then I use it as a sauce base.

Let it down to a pourable consistency with milk, add in some cornflour...depends how much milk you have added, then I use it in fish pie/macaroni cheese/lasagne. Way less aggro than making a white sauce!

@Gladioli23 I checked and it's actually already a few days out of date so wouldn't want to leave it too much longerGrin- I vaguely remember looking at it when I last cleared the fridge out and thinking it would be ok for a while yet.

I am fairly lax too when it comes to dates - might have to have a little taste first just to make sure! If it doesn't look / smell wrong then I tend to risk it. Not made us ill yet...

I might have to treat myself next time I do an Ocado shop... good price there too compared to Amazon. Would be nice with green yoghurt for breakfast too.
