How to melt chocolate

This is ridiculous. I am in my late 40s and cook a lot. But melting chocolate weirdly is getting harder, not easier!

I always used the bowl above a pan of hot water method, but recently it's been going hard when I've done that.

So I tried the microwave on a lower setting (I tried 600w and 440w) and that seemed fine but then it burnt/went hard.

What the hell is going wrong and surely there must be an east way to do this? I am bored of running back to the shop to buy replacement chocolate.

Please tell me your foolproof ways to melt chocolate!

Are you constantly stirring it? If I do it on the stove I stand over it and mix almost constantly. If it's in the microwave i take it out every 40 seconds or so and stir.

Maybe not recommend but I did some in a saucepan on the hob yesterday, low heat and worked perfectly. I always seem to get it wrong with the microwave.

Make sure whatever you’re using doesn’t have any droplets of water in it, if you rinse the bowls or spatula before use.

also, you have to use fairly posh chocolate. cadburys and other cheap brands just don't melt properly and are more likely to burn.

Microwave - in for 30 seconds, stir, in for 30 seconds, stir, and so and so on until melted and warm enough.

I do over the pan sometimes too
Just keep stirring but it's much quicker in the pan

Cadburys is there only one I melt It melts really well and only burns if you're not careful
