Roasting frozen cauliflower will be a disaster, won't it?

I accidentally ordered a bag of frozen cauliflower instead of fresh florets (serves me right for deciding, for the first time in YEARS, not to jus buy a whole cauliflower).

But I bought it to do roasted veg. It won't work with frozen will it? I need to accept that I'll be making cauliflower cheese, right?

I cook from raw at 160° fan for 30 min but my oven runs very hot. At that temp you should definitely be getting crispness! I’ve never had to cook for 40 minutes. Could it be you’re cooking it for too long and somehow it’s getting less crispy at some stage? Doesn’t seem likely...

Oh another thing I don’t mix/turn over/mess with it. Just pop it in the oven and cook with the same side up throughout. That might do it actually!

I know you asked about roasting but here’s my unsolicited tip for frozen cauliflower florets.

I fry them in a pan with some oil (straight from frozen) constantly tossing until browned all over and cooked through. Then I put a load of sweet chilli sauce on (the kind you get in a bottle for eating with rice) and fry at a high-ish heat (still constantly stirring it through) yum 😋

Mmmmm cauliflower! It’s such a versatile vegetable. Thanks for the suggestion, I’ll definitely try it out.

As I was typing my 180 I was thinking, "but hang on, was the original recipe 160 fan and 180 normal?".... I might try a lower temp as clearly hotter is NOT working and just leads to steaming rather than crisping.

I always roast cauliflower from frozen, just drizzle olive oil over it and some seasoning
