Broccoli and stilton soup/what to do wiht stilton?

Does anyone have a nice recipe for the first and/or any ideas what we can do with a load of stilton. Thanks

No sure if you can freeze stilton, I know you can do so with cheddar/ red leicester/ other non blue cheese. If so I'd chop it into decent chunks and freeze individually so you can take out from freezer as you want. I've made celery and stilton soup before from my mums recipe which is amazingly good, and so easy! (if you like celery ) ;

Put about 100g butter in a saucepan and add a tablespoon cornflour, 1 pt COLD milk(really important it's not hototherwise you'll get dreadful lumps) and some seasoning. Heat gently whisking all the time until thickened slightly. Add 1 head chopped celery, simmer gently until celery softened then turn off heat. Bung in a load of crumbled stilton to you personal taste and stir until all melted, serve with lovely crusty bread...

mmmm Gosh I wish I wasn't pregnant and could eat this now...

Bring a pile of Brobolli to the boil in just enough water to cover, when tender add enough milk to double the volume, bring briefly to the boil, then simmer gently. Thicken with cornflour mixed to a paste and added. Then whizz with a blender, or mash thouroughly (watch out for splashes). Crumble in stilton/blue cheese, a few bits at a time, tasting as you go, until you get the strength you want. Season with pepper, as has been pointed out the stilton has plenty of salt. If it seems a bit bland in the brocolli flavour, adding a bit of a veg stoke cube will boost the flavour.
This recipe also works for Cauliflower and Brocolli.

Brocolli and Stilton Flan also work great as well. Or Bacon & Stilton Flans, bagettes etc.

Try heating some cream in a pan add a fair bit of stilton simmer till its a lumpy sauce and pour over steaks. Ohhh, Im' HUNGRY!

We had a lovely mushroom and stilton starter at a local pub which I've since tried at home (several times!).

Cook some mushrooms in a little butter. Add a splash of cream and melt in some stilton. Pour over warm ciabatta. Delicious!

mix red port with stilton and serve on pumpernickel bread with some walnuts! very very yummy!
