Lunchbox bakes - your favourite recipes please

DS1 has just started school and opted for 'packed-up lunches'. So I have decided that now is the time to start some home baking again.

Tonight I have baked some flapjacks with chopped dried pear and apricots in them. What are your top bakes?

Apricot Muffins (but I put them in bun cases so I suppose they should be Apricot Buns)

1/2 cup finely snipped apricots
1/3 cup unsweetened apple juice
1 cup whole wheat flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cardamom or ginger
1/3 cup chopped walnuts
3 tbsp vegetable oil
1 tbsp sugar
1 egg

Soak the apricots in the apple juice, mix dry ingrediants in one pot and wet in an another then combine the three. Apricots do not need a long soak.

Seed Cake
450g (1lb) Butter
450g (1lb) Flour
340g (12oz) Caster Sugar
20g (¾oz) Caraway Seeds
6 Eggs
1 glass Brandy
Ground Mace and Grated Nutmeg, to taste

Cream the butter and sift in the flour.
Add the sugar, mace, nutmeg and caraway seeds and mix together well.
Stir in the whisked eggs and the brandy.
Beat the cake again for 10 minutes.
Put it into a tin lined with buttered paper.
Bake it for 1½ to 2 hours.
This cake would be equally nice made with currants and omitting the caraway seeds.

Time: 1½ to 2 hours.

Savoury Muffins from this recipe here

I also do hummus (sp) and veggie sticks. An apple can be peeled and sliced in the am and if wrapped really really well in cling will look good at lunch.

I never put more than five things in their box at that age.
Juice, Fruit, a small sandwich/wrap/mini pita/mini bagel, a small savoury snack and a small treat.

DS tomorrow is having, Juice, a ham and cheese muffin, a small pot of homemade rice pudding with sultanas, a handful of grapes and half wrap with chicken and salad. (chicken from todays lunch and rice pudding from tea.)

Chocolate Fork Cookies
(really easy)
8oz butter or good quality margarine
4oz caster sugar
1 teaspoon vanilla essence
8oz self raising flour
2oz drinking chocolate

Cream the butter with the sugar and vanilla essence, then work in the flour and the chocolate. Divide into pieces the size of a walnut and roll into balls, place onto a greased baking sheet leaving room for spreading and flatten with a large fork dipped in cold water. Bake in a moderately hot oven (190C, 375F, Gas Mark 5) for 12 to 15 minutes. Leave to firm for a minute on the baking sheet, then cool on a wire rack. Decorate with icing sugar if liked.

NB To make vanilla cookies just up the quantity of self raising flour and leave out the drinking chocolate.

Flapjack - any recipe. Add lots of dried fruit/seeds etc if palatable to your child.

Carrot cake (annabel carmel recipe is good)

Thanks for those. The savoury muffins sound particuarly interesting as I've never tried anything like that before.
