What's your favourite chicken curry recipe?

I've got onions, a green pepper, tins of tomatoes, most spices.
I've got no dairy or coconut milk - or inspiration of any kind!

What are your favourite chicken curry recipes? I've got a bit of time free this evening so it doesn't have to be a curry on the hurry!

Not sure if you have anything to substitute for the yogurt, but this pistachio curry is delicious if so.

You don't need a dairy substitute.

If you've got tomato puree, add a very large squirt of that to the softened until browning onion after adding garlic/ginger/spices/chicken/peppers and a tin of tomatoes if you have them. Leave it on a low heat with a lid for much longer than usual, until the oil starts rising and it looks volcanic. Add some mango chutney/redcurrant sauce/tamarind paste/whatever you've got (within reason) that's sweet and tangy - brown sauce works in a pinch. Add some garam masala or ras el hanout at the end and boil it rapidly with the lid off if it's too liquid.

If you also boil potatoes in water with a pinch of turmeric and some garam masala/chilli flakes, you get brightly coloured spuds that taste of something and you stir those into the pan with the sauce.

Thanks for the suggestions! There weren't any other suggestions other than the one I replied to when I left work so I hit google and ended up making this. If you want a recipe I can recommend it - it was delicious!

With this ingredients I usually chuck in garam masala and some curry powder. Does the job!
