I need inspo for new midweek meal ideas!

I'm not a huge fan of meat so only really eat chicken- I also hate mushrooms (I'm like a child).

Other than that I'll eat anything!

Have you got a decent sized freezer? I make lots of veggie chilli, curry, lentil bolognese m etc then it’s just a case of cooking a small portion of carb to go with it or putting a jacket potato in.

I like a fresh tuna steak for a quick, healthy midweek meal. I’m of simple tastes so just flash it in the griddle pan, plenty of balsamic vinegar, salt and black pepper. Either with salad or green beans and roasted tomatoes.
Salmon tray bake, also really simple, can just be thrown in the oven with whatever flavours you fancy, I really like tenderstem, peppers, red onion, courgette, chilli, lime juice and corriander.
Peppers stuffed with cous cous mixed with roasted aubergine, onion, chickpeas, chilli, ginger and garlic. Then topped with mozerella and breadcrumbs.
Cauliflower, red pepper and chickpea curry.
Baked Sweet potatoes topped apple slaw.
Shakshuka
Root veg casserole

What do you mean by "healthy" - are you looking for nutritious without worrying about calories? Or lower calorie meals? Or both? Meals that are low in fat but high in fibre? It's quite a range.

But a few that I put in my healthy bucket include:

A variety of salads, although I serve often with garlic bread. Healtheer version is with new potatoes or just a couple of slices of normal bread.

Foil-baked salmon parcels with steamed veg and rice/noodles.

Any kind of grilled meat or fish with salad and new potatoes (definitely only starting this again now with spring coming).

Chicken tray bakes - I usually do them with new potatoes and steamed vegetables.

Roasted vegetables served on couscous with feta cheese.

Theoretically, a quick stir fry or fried rice fit in this category but I think I'm a bit too generous with the oil when I do this sort of thing! Grin

Probably higher calorie but thai-style red soup or curry with lots of added vegetables is popular here. I usually add a couple of spoons of peanut butter too.

Thank you for the suggestions! Yes I'm not too focused on calories as I'm breastfeeding at the moment more focused on nutrition.
I'm very excited for the summer as I just never fancy any salads in the winter! And I make a great salad lol.

If you like fish those mackeral fillets from the fridge section of all supermarkets are cheap and healthy. We have with steamed veg and potatos.

It is SO versatile, you can make it veggie, and add in whatever bits you have in the fridge! No standing and stirring like a normal risotto.

Other than that, mild veggie curries are the norm in my home — we're also not big meat eaters aside from chicken.
