Vegetable Crisps - nutrition?

DD is a nightmare with fruit/veg. She isnt given crisps but has been tucking into some of those waitrose vegetable crisps (sweet potato, parsnip, beetroot etc with no salt, just sunflower oil) that we had at home over christmas as she thinks they are 'biccies'

We tried to do our own homemade ones today but they werent as crisp and she refused to eat them.

So i was wondering if anyone knows if shop bought vegetabel crisps maintain the nutritional goodness of the veg or whether it is all cooked out of them?

Seeing as they are heated to very high temperatures, many water soluble / unstable vitamins such as vitimin c will be destroyed. However a small amount of the more stable and fat soluble vitamins may be retained (vitamin A). However, it is probably quite negligable and as you probably know, never will be as good as fresh veg.
They are higher in fibre though, so this is a plus!
