Can I make my own frozen soffrito??

Can I just chop and freeze raw celery / carrots / onions or will it go all gloopy when I try to use it out of the freezer??

I dont know, but Waitrose sell a pouch of soffrito which is long life. Any help?

I'm trying to do something with a load of sad looking celery and carrots so don't need to buy it.

The high water content in celery, particularly, means that the structure will break down in the freezer and you'll get something much soggier when you defrost it. If you're going to blend it after cooking then it possibly won't matter but personally, I'd do the soffrito first and then freeze it.

Yeah, I used to do it all the time when I was organised! I'd grate up loads of onion, celery and carrot in the food processor and freeze it in individual portions.
When I don't have time for that and I've got celery going soft, I just chop and freeze and then use it for cooking straight from the freezer. It wouldn't be very nice in a salad once defrosted as it does go very mushy, but absolutely fine for pasta sauce, soup etc.

I've tried various ways, but works for me is to cook a batch of the 3 together & freeze in suitable portions

Ah ok - well this version has done in raw as I didn't have time to cook so will see how it turns out then know I can try cooking it next time!

I do it all the time - am eating a bowl of soup that I’ve used it in right now :-). It’s great - I just make sure I squeeze all the air out of the bag when I put it in the freezer.

I do this all the time. I whizz up any whammy carrots, sad leeks (or spring onions), celery, onion, in the processor, then bag it up and squeeze out the air and freeze. It's very useful.

I freeze random veg if I have it leftover or spare, so I like turnip in soup, but won't use a whole one in each pot, so chop it up and freeze. Then tip it into the pan frozen. Works for celery, butternut squash, pumpkin etc too
